Remember Sausage Peppers and Onions?
It may not be the trendiest of dish, but boy is it delish! Years ago, there were few get togethers that didn’t include a tray of sausage peppers and onions. Many loved it the traditional way, with the red sauce. But I always make my sausage peppers and onions with a drizzle of great olive oil and a clear sauce.
I am excited to share with you a new spin on an old favorite. I promise – you are going to like this version, perhaps even better. This Sausage Pepper and Onions Pasta Casserole is even better because – One. you can make it the day before. Two. it is a pasta casserole, so you don’t have to worry about making a side dish or making sure you have fresh rolls. We all know it is a pain to buy the rolls and cut them all right before your guests arrive.
You have got to try this Sausage Pepper and Onions Pasta Casserole. You will thank me. I promise. This is our most requested main dish during football season. Serve with a salad and you are good to go. If you love sausage and peppers and onions as much as I do, this recipe is also a must try Slow Cooked Pork Peppers and Onions. - 1 pound ziti
- ½ pound turkey sausage, casing removed (Italian Pork Sausage can also be used)
- ½ cup butter
- 1 cup pepper cut into strips
- ⅓ cup sliced red onion
- ⅓ cup all-purpose flour
- 2¼ cups milk
- 2 cups shredded cheddar cheese
- ½ cup grated parmesan cheese
- salt and pepper to taste
- additional butter to butter the casserole dish
- Preheat oven to 350º
- Prepare pasta according to pasta directions.
- In a large skillet, brown the turkey sausage.
- Remove from pan and drain off fat.
- Melt butter and cook peppers and onions until tender but not brown.
- Stir flour into the pepper and onion mixture and slowly stir in the milk.
- Cook over low heat while stirring constantly, over medium-low heat until well blended.
- Stir the cheddar cheese, parmesan cheese and salt and pepper to taste.
- Stir cooked ziti and sausage into the cheesy mixture.
- Pour into a buttered casserole dish.
- Bake uncovered for approximately 30 minutes or until cheese is bubbly.
Isabel’s Hints and Tips:
1. If you like your dish spicy, use hot italian sausage. Sometimes I make both, a mild and a spicy version.
2. I try to use green and red pepper when I am entertaining. They look so festive during the Holidays. As luck would have it, my grocer was out of red so I used the yellow pepper.
3. Use the short ziti when possible or shells. It adds to the experience when you bite into one of the pasta pillows and have the filling ooze out. It’s a party in your mouth.
4. Don’t overfill your casserole dish like I did or you will be cleaning your oven. The things we do in the name of trying to get a great shot.
