Brie Tomato and Quinoa

This Brie Tomato and Quinoa Recipe is a perfect dish for a football Sunday. The brie melts and makes the most delicious cheesy sauce that is a crowd pleaser with little fuss.

Ingredients
  • 2 cups chicken broth
  • 1 cup quinoa
  • 1 8 ounce wheel of brie
  • 1 large tomato
  • 2 tablespoons olive oil
  • ¼ cup basil, sliced thin
  • 2 green onion, sliced thin
  • fresh ground sea salt and pepper to taste
Instructions
  1. Rinse quinoa to remove residue.
  2. Combine 1 cup quinoa with 2 cups broth in a large pot.
  3. Bring to a boil.
  4. Reduce heat to low, cover and let simmer for 15 minutes.
  5. In the meantime, remove the rind from the brie and cut into ½ inch cubes.
  6. Cut the tomato into small cubes and remove seeds.
  7. Add the brie, tomato, basil to a large bowl.
  8. Turn off the heat to the pot of quinoa and let sit for 5 minutes.
  9. Pour the quinoa over the brie and tomato mixture.
  10. Add the olive oil and mix all the ingredients until the brie is melted.
  11. It will make a delicious cheesy sauce.
  12. Sprinkle with green onions and additional basil if desired.
  13. Enjoy immediately while hot or let it cool and serve warm

It’s the most wonderful time of the year. Football season is here and at our house, this calls for a celebration. This football family is in its element when this time of year comes around. Great memories are made football season after football season.

All our Sunday Supper “rules” are out the door during football season and we head to the family room to enjoy cheering on our favorite teams. There’s lots of yelling at the television, great food and the adults enjoy great wine pairings.  Gallo Family Cabernet Sauvignon and Chardonnay are always a likely choice.  It’s always fun serving the mini-bottles for entertaining friends because everyone can choose the wine they like.

Preparing recipes that are easy and can be served piping hot or slightly warm is key to entertaining during football games. This delicious Brie Tomato and Quinoa Recipe is perfect for a crowd and so easy to whip up. I slice the brie, tomato, basil and green onions prior to friends arriving. I then cook the quinoa close to halftime and combine all the delicious ingredients and serve right at halftime.

The brie when combined with the hot quinoa, melts and makes the most delicious cheesy sauce that is a crowd pleaser with little fuss. Sometimes I serve a bowl of quinoa and another made with angel hair pasta. It is a winning combination when paired with Gallo Family Chardonnay.
