Is there anything better than walking into your house and smelling pure deliciousness wafting through the air? The smell of onions and peppers roasting is one of my absolute favorite smells. Especially if it includes every color pepper that you can find. It’s always amazing to me that green peppers taste different from red peppers and yellow peppers taste different from orange peppers. Slow Cooked Pork Peppers and Onions will have you using all your senses and questioning could it really be that good?
The color of the peppers adds to the beauty and creates a memorable experience. But the heavenly smell is what you will remember and what will make you make Pork Peppers and Onions over and over again for Sunday Supper. The taste, the heavenly taste… the caramelized onions and peppers on top of the juicy pork brings it all together. This recipe is a favorite in our home and the base to so many more recipes that can be made for #WeekdaySupper!
We love using the leftovers for the juicy Slow Cooked Pork Peppers and Onions and make Mexican Pizza. While many think of potatoes, when they think of roasted pork, we love to pair it with Portuguese Rice.
When Susan from The Girl in the Little Red Kitchen suggested this theme, I was all over it. - 4 pound Pork Roast
- ¼ Cup Olive Oil
- 2 Red Onions, sliced thin
- 4 Peppers, sliced into strips. I like to use Red, Green, Orange and Yellow but you can use any color
- 3 Bay leaves
- 1 tablespoon chopped Parsley
- 3 cups of White Wine or Chicken Broth
- Sea Salt and Ground Pepper to taste
- Preheat oven to 250 degrees
- Place the Pork Roast in a large oven proof baking dish
- Brush the Pork with Olive Oil
- Season the Pork with Sea Salt and Ground Pepper
- Layer the Peppers and Onions on top of the Pork Roast
- Add the Bay leaves under the Peppers and Onions and sprinkle with chopped Parsley
- Pour the White Wine or Chicken Broth to the side of the Pork Roast. Do not pour over the top of the Pepper and Onions and seasoning. You don't want to remove the Olive oil and seasoning from the Pork
- Cover with lid or aluminum foil and bake for 5.5 hours
- Raise the temperature to 400, remove the peppers and onions and bake the Pork Roast for 30 more minutes until the top is browned
- Serve over Rice
