
These Slow Cooker Asian Beef Bowls are a lifesaver for the busy family
I’m all about Easy Peasy when it comes to back to school season. Speaking of… can you believe it is almost here? I can’t believe my youngest is starting high school this year. This will be his first time out of uniform and riding a school bus if he so chooses. I’ll be honest, I love driving my kids to school. Call it a habit from when they were younger, but it gives me some alone time with them every morning and it is such a great start to my day.
This is also the first time in 18 years that we won’t be at the youth football field. I almost don’t know what to do with myself every Saturday. We have spent the last 18 years at the football field, many times all day because we had 3 games to watch. There is a part of me that is a little sad but honestly, I am ready for the next phase. Riley is so excited about starting high school (being the youngest is hard, you are always waiting to do what your older siblings have done for so long) that I can’t help but be excited for him.
At our house, I know our week will run much smoother if I prep on Sunday for the coming week. This Slow Cooker Asian Beef Recipe is not only a favorite, it is super easy and we love making bowls out of it during the week. We “veg”out these bowls with some of the kids favorite toppings.
Although they are “Asian Beef Bowls” we don’t get hung up on only using Asian ingredients. I am a big believer in letting the kids add their favorite veggies and let me tell you, nuts are totally the bomb in this dish. Have fun, pile the beef over quinoa, sorghum, barley or rice. And don’t forget to add some nuts to these delicious bowls. They crunch adds a great flavor and texture. And don’t forget the Yum Yum Sauce, whether you make it at home or buy it. Kids will eat anything topped with Yum Yum Sauce!

Asian Bowl Toppings:
- Corn
- Squash
- Spinach
- Peas
- Avocado
- Green Onions
- Chia Seeds
- Flax Seeds
- Almonds
- Pepita Seeds
- Sunflower Seeds
- Yum Yum Sauce

FAMILY FOODIE QUICK TIP: I am all about easy peasy meals. Many will argue that the beef will needs to be seared before you add it to the slow cooker. I am here to tell you that I have tried it both ways and if you are making a shredded beef, it does not make a difference. Soooo…. why add an extra step. This beef is delicious even without the sear. Now, if you are serving like a roast beef, I recommend searing before placing in the slow cooker.

- 3 pounds Certified Angus Beef® Eye Round or Sirloin Tip Roast
- 2 tablespoons garlic powder
- ¼ cup brown sugar
- ½ cup Asian sauce or Ponzu Sauce
- Place the Certified Angus Beef Eye Round in the slow cooker.
- Sprinkle with garlic powder and brown sugar.
- Add Asian sauce.
- Cover and cook on low for 10 hours or overnight.
- Using 2 forks, pull the beef apart until shredded.
- Cover and cook on low for an additional hour or until most of the juicy is absorbed by the beef.
- Serve over cooked rice, quinoa, barley or sorghum.
- Add your favorite veggies and nuts on top.
