Joe's SpecialJoe’s Special – this is one scramble you have got to try. Eggs, spinach, ground beef, onions and spices. Easy delicious and nutritious! 

I love traveling and one of the reasons I adore it so much is the ability to try food from different locations. There is nothing I love more than learning about dishes that are specific to a region. On a recent trip to Monterey, CA, I enjoyed breakfast at Rosine’s. And by enjoyed, I mean I enjoyed it so much that I went back a second time. The first time, I was so intrigued by an entrée on the menu –Jim’s Special a delicious combination of eggs, spinach, ground beef, mushrooms, onions and spices, cooked just right. I did order something else, but apparently I couldn’t stop thinking about this scramble. 

This place kept calling my name and I just had to go back again and this time, I had to try it! When I told the waitress that I had a hankering for this dish, I was informed that this is one of their most popular dishes. I was amazed to find out Jim’s Special was actually Joe’s Special, a dish that originated in San Francisco. It always includes eggs, spinach and ground beef. Rosine’s owner, Jim decided to add mushrooms and call it Jim’s Special.

I am thinking we need an Isabel’s Special…. don’t you think? This time, I decided to make the traditional Joe’s Special but just you wait, I am ready to come up with an Isabel’s Special combination. Just you wait!

The best part of Joe’s Special is that it is delicious for breakfast but it is so hearty that it makes an easy and nutritious dinner. I am always looking for ways to add veggies to our dinners and this beefy dish was a huge hit at our house.

Ingredients
  • 2 tablespoons butter
  • 1 medium-size onion, peeled and finely chopped
  • 1 pound ground sirloin beef
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • 10 ounces, one bag, fresh spinach, washed and chopped
  • 4 eggs, well beaten
  • Sliced tomatoes and basil to serve on the side, optional
Instructions
  1. In a large skillet, heat the oil and saute the onion until golden brown.
  2. Add beef, garlic powder and salt and pepper. Stir to break up meat while it cooks.
  3. Stir in spinach and stir until it wilts, approximately 3 minutes.
  4. Stir in the beaten eggs, stirring and cooking until eggs are set.
  5. Serve over toast and with sliced tomatoes and basil if desired

    I’m willing to bet ‘Isabel’s Special’ will include chorizo 😉 This looks great! I love a high protein meal like this. Thanks for sharing! It was so much fun spending time with you on the FL Beef Immersion weekend. I can’t wait to do it again!
