
These easy beef marsala bowls are fun and a great way to let the family build their own healthy meal.
If I have said it once, I have said it a million times, fall is just crazy around our house. Our football schedule keeps us hopping this time of year and we wouldn’t want it any other way. Sometimes I reminisce of years past where we had four football games every week. Alexandra cheered for varsity Friday night games. Ronnie played JV on Thursday and Reis and Riley played every Saturday. Some years Riley would have a game at 8am and Reis wouldn’t play until 6:00 pm. It seems like a blur now but as I look back, I think about all the touchdowns, the losses, the super bowl games and the celebrations. Like life, football seasons are full of ups and downs.
For some reason, it doesn’t seem like it has slowed down at all. We are still so busy during this time of year. And then I remind myself that we do still have four games every week. Although Alexandra and Ronnie are in college, Reis now plays high school football, Riley plays youth football and flag football and Ron coaches his own high school team. As much as things change, they also stay the same – we are as busy as ever.
One thing I learned early on is to plan for the upcoming week on Sunday. If I prepare a delicious meal on Sunday, it can be “reinvented” into a new delicious meal for the week. Many times, you will not know that it was part of the Sunday Supper meal and other times we want it to still resemble that dish just a tad. I would put these Easy Beef Marsala Bowls in the category of they are so delicious, we want them to resemble the dish just a tad.
Take the leftover beef from Stove top Marsala Roast Beef and bring on the veggies! We have made these bowls with rice, noodles, quinoa or even polenta and my kids love this every time we make it. Change up the veggies a bit, add some corn to the carrots and mushroom. Or how about some radishes. They add the perfect little crisp bite.
The rice, noodles and quinoa can be made ahead of time and my family loves when I set up a veggie bar topping for them and let them come up with their own creations. I even enjoy this delicious marsala beef over arugula. Get creative and try your own bowls.

- 2 cups shredded Marsala Roast Beef
- 4 cups of cooked rice, quinoa or pasta
- 1 cup of cooked carrots
- 1 cup of cooked mushrooms
- 1 cup of cooked corn
- ½ cup sliced radish
- It doesn't get any easier. Set up a Beef Marsala bar and let the family add their favorite toppings.

I had already sent my mom your Beef Marsala recipe and told her we had to make! Now I know what we can do with those leftovers 🙂
