Fruit Salad with Port Honey Drizzle #SundaySupper

I love long weekends and this one is truly a special one.  My second oldest is graduating from High School.  While age doesn’t play a very important role in my every day life, it is hard for me to imagine that I now have two children that have graduated from High School.  Yes, that old cliché is so true – Where has the time gone?

As much as I am sad that time flies by, I am so blessed to have so many amazing memories with all four of my children on a daily basis. Today’s #SundaySupper recipe is inspired by Ronnie.  He loves fruit and it is nothing for him to down an entire pint of blueberries or a whole pineapple.  This boy can live on fruit and one of his favorite treats is Fruit Salad with Lemon Port Honey Drizzle.

The Port Wine complements the Honey and when mixed with the juice of the lemon and the fruits, it is a beautiful thing.  This Portuguese inspired Fruit Salad with Lemon Honey Drizzle is a favorite for a picnic or any get together with family and friends.

Fruit Salad

I absolutely adore the blog, Happy Baking Days.  Katy is the mind behind this great blog and I just love that the reason she started her food blog was because she wanted to be part of The Sunday Supper Movement.  Katy inspires me with her recipes and writings.  She also has an incredible travel blog and gives us great insight to Britain.  She suggested a #SundaySupper Picnic theme and I couldn’t agree more!  It’s the perfect theme for memorial day weekend.

Ingredients
  • 1 pound of Strawberries, sliced
  • 2 Clementines
  • 1 pint of Blueberries
  • 1 Pineapple, cored and cubed
  • 2 cups of seedless grapes
  • ½ cup of Port Wine
  • Juice from one Lemon
  • 2 Tablespoons Honey
Instructions
  1. Mix all the fruit together is a large bowl
  2. Mix the juice of one lemon, port wine and honey together
  3. Drizzle over the fruit salad and let marinade in the fruit for 3 to 6 hours

    When I do make fruit salad it is usually a mundane collection of cut fruit sprinkled with a little sugar and, if I am feeling daring, a spoon or two of balsamic. I love the idea of a port wine honey drizzle! Pinning to my Recipes to Try board!

    Congratulations, momma! You must be so proud of your kids. I hear ya about time flying by – I’m not a mom but I remember my nephews when they were born and now they’re 10 and 9 years old. I can’t believe it! I love fruit too and I’d be all over this salad, especially with that delectable port honey dressing. I’ve never even heard of a concoction like that before and it sounds delicious!
