Tomato Bean Salad #SundaySupper

I have been on a total salad kick around here and I am excited to share another salad that I am totally in love with this summer. Tomato Bean Salad is one of those salads that you can whip up in no time at all and it is so light and delicious. I love that it has an amazing creamy texture, yet there is no mayo used. It is perfect for a picnic, especially when the weather is warm.

Tomato Bean Salad #SundaySupper

Ingredients

  • 2 15 ounce cans of cannellini beans, drained and rinsed
  • 1 large tomato, chopped small
  • 4 ounces goat cheese, cut into small pieces
  • 1/4 cup green onions, finely chopped
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground pepper
  • 1/4 cup fresh lemon juice
  • 4 tablespoons extra-virgin olive oil
  • 1 teaspoon minced fresh garlic
  • 1/4 teaspoon crushed red pepper
  • small bunch of parsley for garnish, if desired

Instructions

  1. In a large bowl, combine the cannellini beans, chopped tomato, goat cheese and green onion.
  2. Mix well.
  3. Sprinkle with salt and pepper.
  4. In a small bowl combine lemon juice, olive oil, fresh garlic, crushed red pepper.
  5. Whisk until combined well.
  6. Combine with the bean mixture and refrigerate for 1 to 3 hours.
  7. Garnish with chopped parsley and additional green onions if desired.

The Sunday Supper Family is in love with getting our families outdoors and enjoying picnic food. Last week 26 of the Sunday Supper family members got together to fill a picnic basket to play The Picnic Game, in honor of International Picnic Day. This week, even more of the #SundaySupper crew is gathering to fill what will probably be a few large picnic baskets to share a big virtual picnic with you, with the help of our hostess this week, Jane of Jane’s Adventures in Dinner.

How much fun is this picnic going to be? I can’t imagine a better menu for a fun outing!
