Crispy and Spicy Lemon Chicken Thighs #SundaySupper

Spicy Lemon Chicken Thighs

I have a confession, I am a total wimp with my cooking.  Very rarely do I cook a spicy dish.  When Amy from KimchiMom, excitedly brought up this week’s theme, I thought… Oh No! But the rest of the Sunday Supper Contributors were so excited.  I had to turn to my heritage for inspiration.  Paprika is a staple in Portuguese Cuisine.  It was the perfect inspiration that I needed.  The taste combination of paprika and lemon was  out of this world.  And don’t let me get started on the crispy skin, it was an immediate favorite with our family.   We served the Crispy and Spicy Lemon Chicken Thighs with Portuguese Rice and a simple salad.

Ingredients
  • 8 chicken thighs
  • 8 Tablespoons paprika
  • 1 Tablespoon onion powder
  • 1½ Tablespoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 Tablespoons olive oil
  • 2 Lemons
Instructions
  1. Combine paprika, onion powder, garlic powder, salt and pepper in a bowl.
  2. Heat large skillet to medium and add olive oil.
  3. Dip chicken thighs in the spice mixture.
  4. Press down the chicken into the mixture until well coated.
  5. Place 4 at a time in the skillet.
  6. Cook on each side approximately 10 to 12 minutes until the skin is crispy and the chicken is cooked through.
  7. Repeat until all the thighs are cooked.
  8. Remove the chicken thighs from the skillet
  9. Thinly slice one lemon and add to the skillet. Simmer on low for approximately 5 minutes.
  10. Add all the thighs to the skillet and squeeze the lemon juice from one lemon over the chicken.
  11. I love to serve with Portuguese Rice and a Simple Salad

    One of my first dishes as a teenager was goulash, so paprika is one of my early loves. I still love it and add it to chimichurri. Great chicken recipe Isabel and I like that you´re using Edamam for the nutrition part!

    Sometimes simplest is best. And you can easily adjust the spice in this by using hot or sweet paprika! Yum!

    I am a spicy wimp too, but I like the flavor. I am a glutton for punishment, I suppose? I have a frozen package of chicken thighs that I have had NO inspiration for..until now. Thanks for this recipe!

    The Portuguese here exchanged paprika for the red chili here in goa. ^.^ I would enjoy your recipe completely, my husband might need the red chili after all instead of the paprika. Super delicious Isabel!

    This is such a lovely dish, Isabel. I know the skin is unhealthy but I must admit that it is always my favorite part of any chicken dish when it is crispy. Lemon and paprika are a winner combination!

    I didn’t realize paprika was a big part of Portuguese cuisine. I was aware of the importance of paprika in Hungary. (My brother and his family lived in Hungary for a bit.) So thank you for the education and this stellar crispy chicken recipe =)
