Do you celebrate Cinco de Mayo? We typically don’t celebrate or honestly, cook many Mexican dishes at our home. After making Mexican Pizza with Chipotle Orange Sauce, and enjoying it along with a Margarita, I can see why Cinco de Mayo Recipes are such a hit.
My friend Jen from Juanita’s Cocina is always excited about Mexican Cuisine and couldn’t wait to host these week’s #SundaySupper event. After seeing all the beautiful recipes that the Sunday Supper Team came up with, I think will be enjoying more Mexican recipes at our home.
Since Alexandra and her boyfriend are quite the college foodies, ( I am not kidding, they eat quite well for college students) I decided to turn to them for some inspiration. We played in the kitchen until we came up with this recipe for Mexican Pizza with Orange Chipotle Sauce and… it truly was spectacular! The best part about it, I love that we can set up a Mexican Pizza Station and everyone can add their own toppings to create their own masterpiece. 

- 2 tablespoons Butter
- 1 sliced Red Bell Pepper
- 1 sliced Yellow Bell Pepper
- 1 large Onion sliced (I love Red or Vidalia)
- 2 tablespoons minced Garlic
- 2 cups of cooked Pork
- 4 Flour Tortillas
- Cilantro to garnish
- For the Sauce:
- 1 Chipotle Pepper in adobo sauce
- 3 tablespoons smoked Paprika
- 1 tablespoon Mayonnaise
- ½ cup Orange Juice (or juice from 2 Oranges)
- ½ teaspoon Orange Zest
- Add Butter to large Sauce Pan and melt
- Add Red Bell Pepper, Yellow Bell Pepper and Onion and cook until soft. Approximately 10 minutes
- Add Garlic and cook for approximately 5 minutes
- Add Pork and simmer for 10 minutes
- For the Sauce:
- Blend Chipotle Pepper, Paprika, Mayonnaise and Lemon Juice in a blender
- Preheat oven to 350
- Place the Pork mixture on top of each Tortilla on a baking sheet
- Bake for approximately 5 minutes
- Drizzle the Chipotle Orange Sauce over each Pizza and bake for an additional 5 minutes
- Garnish with Cilantro
