- 8 chicken thighs
- 8 Tablespoons paprika
- 1 Tablespoon onion powder
- 1½ Tablespoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 Tablespoons olive oil
- 2 Lemons
- Combine paprika, onion powder, garlic powder, salt and pepper in a bowl.
- Heat large skillet to medium and add olive oil.
- Dip chicken thighs in the spice mixture.
- Press down the chicken into the mixture until well coated.
- Place 4 at a time in the skillet.
- Cook on each side approximately 10 to 12 minutes until the skin is crispy and the chicken is cooked through.
- Repeat until all the thighs are cooked.
- Remove the chicken thighs from the skillet
- Thinly slice one lemon and add to the skillet. Simmer on low for approximately 5 minutes.
- Add all the thighs to the skillet and squeeze the lemon juice from one lemon over the chicken.
- I love to serve with Portuguese Rice and a Simple Salad
