Happy Monday! This morning, I find myself thinking about all the wonderful memories this past week has brought. The summer is winding down for us. College is just around the corner for the older two and my younger two will starting a new school this year. It’s so hard to believe that my youngest will be entering middle school. I take comfort in the wonderful memories that we created this summer.
This summer was just amazing and we were so excited to have everyone home. Not only was Alexandra back home, I had the had the privilege of working with her on a daily basis. It was an experience that I will always remember. I can honestly say, she blew me away. Especially in the technology department that does not come so easy (at times can be torturous) to her mother.
Sometimes I wonder if my work is really considered work. Last week, we were invited to Tradewinds Island Resort. This place is a kids vacation dream come true. There is a Splash Island Water Park, a water park right in the middle of the Gulf of Mexico, a high tides water slide (200 feet), paddle boats, dive-in movies and more! Needless to say, the boys had the time of their lives and Alexandra and I enjoyed taking in the sun and relaxing in our beach cabana. What a great way to spend a summer day.
You may not have heard, but yesterday was my birthday. I know, I was so quiet about it that you may not have realized it. We had an awesome dinner made by Vo-Vo that of course ended with her Famous Cheesecake. It was just amazing. The kids gave me an awesome gift. It was one of those gifts that unless you are a foodie, you just couldn’t appreciate. But if you are a foodie, you were oohing and aahing right along with me. Is it a piece of wood or a cutting board?
I am starting off this week with wonderful memories, many that were made around the family table. This weeks recipes are not only easy and delicious but they are totally family friendly. I can’t wait to try these fabulous recipes.
