Pork Meatballs #SundaySupper

Spaghetti and MeatballsToday is a very special day… it’s Family Foodie’s birthday! How awesome is it that her birthday happened to fall on a Sunday? Everyone in our house knows Sunday is Mom’s favorite day because she gets to celebrate Sunday Supper with everyone, and now she’s getting to celebrate her birthday with you all, too!

This week’s theme is recipes inspired by songs, and when my mom asked me what songs I could come up with, the first one to pop into my head was “On Top of Spaghetti.” Yes, you’re thinking of the right song. The goofy, kid song about losing a meatball when somebody sneezed. Right when I thought of it, I started belting out the song that I know WAY too well and we could not stop laughing.

When I was little we had a VHS of baby songs including “Michael Finnegan” and “On Top of Spaghetti.”  I watched this video on loop for years and drove my parents crazy over it. This song has been stuck in our heads since it came up, and you could catch one of us humming or whistling it in the kitchen. As foolish as it may be, this song brings back so many memories for my parents and me.

Not only does this song remind me so much of my childhood, but I grew up loving Mom’s famous homemade pork meatballs and sauce. It’s a classic that we all love and a recipe Mom has mastered. This is the perfect heartfelt meal to celebrate Mom’s birthday (She looks great for 21… right?!).

I would like to say a big Happy Birthday our extraordinary Mom/the amazing Family Foodie. She is a huge inspiration and an excellent role model to her children. We are all so grateful for everything she does for us and we hope she has a wonderful day.

Spaghetti and Meatballs

Ingredients
  • 2 slices of white bread
  • ¼ cup milk
  • 1 pound ground pork
  • 2 large eggs
  • 1 cup seasoned bread crumbs
  • ¼ cup Parmesan cheese
  • 1 teaspoon garlic powder
  • Sea salt and ground fresh pepper to taste
  • Tomato Sauce
Instructions
  1. In a small bowl, pour the milk over the bread and let soak for 15 minutes
  2. Squeeze the bread and drain excess milk. Discard the milk.
  3. In a large bowl combine the ground pork, eggs, bread crumbs, parmesan cheese, garlic powder and soaked bread. Season with salt and pepper
  4. Gently mix with your hands to combine all the ingredients. Avoid over mixing
  5. Preheat the over to 375 degrees
  6. Gently roll each meatball into 2 inch balls (they are nice large meatballs)
  7. Space them one on a prepared baking pan approximately ½ inch apart
  8. Bake the meatballs for ½ hour
  9. Bring the tomato sauce to a simmer.
  10. When the meatballs are done, add them to the tomato sauce and simmer for a minimum of 2 hours.

    Happy Birthday, Isabel! These meatballs look AMAZING – the perfect meal for my own birthday, which is in January. It’s traditionally the coldest day of the year here in Michigan. On birthday, it was 20 degrees below zero! It’s generally best to just stay inside and eat meatballs 🙂
