By now you all know how much Vo-Vo loves to bake. This grandma is a baking dynamo! One of her absolute favorite things to bake is Vo-Vo’s famous Strawberry Cheesecake. She bakes a cheesecake for every birthday party and every celebration. We all look forward to and love Vo-Vo’s Cheesecake, it is creamy and just melts in your mouth. I think what we really love most is seeing the original designs that she comes up with. The strawberries take on a new design each time she makes this cheesecake, and it is so much fun for us to see how creative Vo-Vo gets. Sometimes there will be a chocolate drizzle, sometimes a strawberry drizzle – one just never knows what she is going to come up with for each birthday celebration.
The best part of Vo-Vo’s Famous Strawberry Cheesecake, is that it is made with love. I truly believe that is the secret to making this extraordinary cheesecake.

We celebrated Vo’s Birthday last month and Vo-Vo’s famous strawberry cheesecake was the talk of the table. Yep, the cheesecake is the highlight of all our celebrations… we loved this particular design.


- Crust:
- 6 tablespoons butter
- 1½ cups graham cracker crumbs
- 2 tablespoons sugar
- ¼ teaspoon table salt
- Filling:
- 2 pounds cream cheese, at room temperature
- 1¼ cups granulated sugar
- 1 cup sour cream
- 6 large eggs, lightly beaten
- 1 tablespoon vanilla extract
- Topping:
- ½ cup sour cream
- ½ cup confectioners sugar
- ¼ teaspoon vanilla extract
- Strawberries, sliced into a beautiful creation
- Preheat oven to 325 degrees
- For the crust: Melt the butter
- Brush a 9-inch spring-form pan with butter
- Stir the crumbs, sugar, salt and butter together
- Press the crumb mixture into the bottom of the pan
- Bake for approximately 15 to 18 minutes or until golden brown
- Wrap the spring-form pan with aluminum foil and place in a large roasting pan
- For the filling: Beat the cream cheese using a mixer until smooth
- Add the sugar and beat until fluffy
- Slowly beat in the sour cream, eggs and vanilla
- Pour into the cooled crust in the spring-form pan
- Place the roasting pan with the spring-form pan in the oven
- Pour in enough hot water to cover the pan half way
- Bake for approximately 1 hour and 10 minutes, the center of the cake will still wiggle
- For the topping: Gently stir the sour cream, confectioners sugar and vanilla.
- If you choose, stir in 4 pureed strawberries, optional
- Remove the cheesecake from the oven and spread the topping over the cheesecake
- Turn the oven off and place the cheesecake in the oven for 1 hour
- Remove the cheesecake from the oven and run a knife around the edge
- Refrigerate overnight
- Bring cheesecake to room temperature and decorate with strawberries.... remember to come up with a creative design or Vo-Vo would be disappointed
