Today I decided to make a turkey alfalfa sprout sandwich that has been one of my favorites for years. My mom has been making this sandwich for me since middle school, and I had forgotten about it until recently. I would eat this exact same sandwich every single day of the school week… it’s THAT good!
A couple weeks ago my mom and I went to a fresh produce store and were looking through all the vegetables. There were some of the strangest looking vegetables I had never even seen nor heard of. As we were looking through, I saw the box of alfalfa sprouts and remembered this sandwich that I haven’t had in a couple years. Of course I had to buy them, and I’m so glad I did. Since then I’ve had it for lunch almost every day (some things never change).
In this sandwich, there is the perfect combination of healthiness, but still absolutely delicious. I love the textures with the alfalfa sprouts and the smooth creaminess from the combination of the French dressing and cream cheese. I also love the crunchiness from the pumpkin seeds. I’m always a huge fan of having something crunchy with my meals, and for lunch I usually grab a bag of potato chips. My solution to break this not so healthy habit was pumpkin seeds. I’ve also used almond slices as a replacement to the pumpkin seeds, and that is just as delicious!


- 2 slices of Healthy multigrain bread
- 2 slices of deli Turkey
- ¼ cup of Alfalfa sprouts
- 2 tablespoons of Pumpkin seeds
- 2 tablespoons of Cream cheese
- 1 tablespoon of French dressing
- Spread cream cheese on one slice of bread.
- Sprinkle pumpkin seeds on the cream cheese.
- Place turkey and alfalfa sprouts on the seeds.
- Drizzle French dressing on top to finish it off.
- Serve with a side of fresh fruit or vegetables.
