Veggie Stuffed Red Pepper

Today is my younger brother’s 18th birthday. I cannot even believe that we’re both going to be in college this upcoming school year, but I’m so excited for him. My brother, Ronnie, is one of the most interesting characters I know. He’s always so nonchalant about everything, and I think it can be one of his best and one of his worst qualities. It can be so frustrating when you’re trying to get information out of him, but on the other hand he is never stressed and is just a happy guy.

Ronnie is not just my brother, but also one of my best friends. Even when I’m at school for months at a time, I know I can always come home and find a friend. We don’t have to talk to understand each other, and we’ve always got each other’s backs. We’ve always been close and almost never fight, but as my younger brother, he loves to pick on me. He’s always made fun of the foods I eat and my “strange” eating habits. I snack on raw veggies all day, and one of my favorites are alfalfa sprouts. Ronnie always laughs when he catches me snacking on alfalfa sprouts and asks me why I’m eating grass (haha… not funny).  After 18 years of living with him, you would think he would be used to me by now.

When I made this veggie stuffed red pepper, I couldn’t help but think what Ronnie would say if he saw me eating it. The hummus and fresh squeezed lime juice helped keep it from being too dry and it was stuffed with all of my favorite vegetables. This stuffed pepper was the perfect afternoon snack… and a healthy one, as well.

Happy birthday to my brother Ronnie! He’s awesome.

Stuffed Pepper  Stuffed Pepper

Veggie Stuffed Red Pepper

Ingredients
  • 1 red pepper
  • 2 tablespoons black bean hummus
  • ⅓ cup spinach
  • ¼ cup red onions
  • ¼ cup carrots
  • ¼ cup celery
  • ¼ cup broccoli
  • ½ cup alfalfa sprouts
  • ½ of a lime
Instructions
  1. Cut top of red pepper off and remove seeds
  2. Spread hummus to cover the inside of the red pepper
  3. Chop spinach, red onions, carrots, celery, broccoli and alfalfa sprouts
  4. Put all the vegetables in the red pepper
  5. Squeeze lime juice on top

    Happy Birthday Ronnie! And what a wonderful tribute to him Alex! Your stuffed peppers look amazing and you made me feel better about my love of alfalfa sprouts which I have also been known to grab passing the fridge. haha

      This summer we must have an alfalfa sprout fest when we all finally meet at the Food and Wine Conference! Maybe it should be a featured ingredient!
