
Isn’t it funny how many foods take us right back to our childhood? Sometimes just the word itself, others just the smell will take you back to your childhood. For me, one of those foods is tuna fish salad. When I was a child, we would eat dinner every night at 5 o’clock. The news was on the television and we had to be quiet so that my father, who had worked all day, didn’t miss the news. As my mom did the dishes after dinner, it was my job to prepare my dad’s lunch for the next day. Lunch for my father meant, making tuna fish salad and adding it to a long hoagie roll. By preparing tuna fish, I mean open the can add mayo and we were good to do. No veggies, no seasonings. I enjoyed many a tuna fish sandwich in my youth and don’t get me wrong… there something to be said about a good tuna fish salad. I still don’t know how my dad didn’t get bored with the same lunch every single day.
As I got older, I would sometimes add onions and tomato to my tuna fish salad in an attempt to jazz it up a tad. It’s funny how our tastes and palates change. The thought of opening up a can of tuna just isn’t really appealing to me. As much as it was a staple in our pantry growing up, these days, I crave fresh ingredients more often.
You all know how crazy I am about salmon. We enjoy salmon at our home at least once a week and I always double the amount because I know it will make great reinvented leftovers for lunch or dinner the next day. We love Teriyaki Salmon, YUM YUM Salmon, Salmon Quesadillas, Salmon poached in wine and salmon salad. Yep, in our house Salmon Salad has replaced Tuna Salad as a favorite. I especially love it over fresh tomatoes. You know, the ones that you pick up and they smell so good. The smell of tomatoes is one of my favorite smells. If you can get your handles on yellow tomatoes, you must try them. They are a little less acidic and oh so sweet! Add some fresh pea pods and simple vinaigrette or champagne vinaigrette to your salad and you will enjoy a salad similar to those served at the best of restaurants!
Ingredients
- 2 Tomatoes, red or yellow *always smell them first, you will know immediately if they are ripe
- 6 ounces of grilled or poached Salmon
- 2 tablespoons of crumbled Feta Cheese
- 8 Peas, removed from fresh Pea Pods
- 2 Green Onions chopped fine
- Salt and Pepper to Taste
- Olive Oil & Balsamic Vinegar to drizzle or Champagne Vinaigrette
Instructions
- Slice Tomatoes into approximately 1/8 inch thick and plate
- Shred Salmon and place on top of Tomatoes
- Crumble Feta Cheese and sprinkle on top to the Salmon and Tomatoes
- Sprinkle Peas and Green Onions on top of salad
- Season with Salt and Pepper and drizzled with Olive Oil & Balsamic Vinegar or Champagne Vinaigrette

Thanks for the tip on Yellow Tomatoes…. I’ve had to cut out tomatoes in my diet because they have high acidic levels. I adore yellow tomatoes…I’ll be welcoming them back onto my plate.
I would pair this lovely salad with a Chablis. I love salads with Chablis!

What is funny is that she used to make tuna noodle casserole all the time…but would call it chicken noodle casserole and would just not tell me that it was tuna. Annnnd I willingly ate it every time and loved it. Go figure.

I must confess, I still enjoy tuna/mayo wrapped in a soft piece of white bread. My husband, who doesn’t eat seafood, will eat tuna salad, like his mother prepared–with a dash of thyme. It’s funny how we remain so particular about certain things.

They have started to sell it here but triple the price compared to europe and then too not fresh at all. Your Salmon salad is a great snack idea. January 22, 2013 at 4:28 pmOur tuna salad was (and still is) made with sweet pickle cubes, boiled egg, mayonnaise, and a dash of yellow mustard. Occasionally I change out and use dill pickle cubes. My nephew even adds a tiny bit of ketchup.
Your salmon salad is so much fresher than the heavy mayo tuna salad. Nice simple dressing.
