Salmon Salad

Isn’t it funny how many foods take us right back to our childhood?  Sometimes just the word itself, others just the smell will take you back to your childhood.  For me, one of those foods is tuna fish salad.  When I was a child, we would eat dinner every night at 5 o’clock.  The news was  on the television and we had to be quiet so that my father, who had worked all day, didn’t miss the news. As my mom did the dishes after dinner, it was my job to prepare my dad’s lunch for the next day.  Lunch for my father meant, making tuna fish salad and adding it to a long hoagie roll.   By preparing tuna fish, I mean open the can add mayo and we were good to do.  No veggies, no seasonings.  I enjoyed many a tuna fish sandwich in my youth and don’t get me wrong… there something to be said about a good tuna fish salad.  I still don’t know how my dad didn’t get bored with the same lunch every single day.

As I got older, I would sometimes add onions and tomato to my tuna fish salad in an attempt to jazz it up a tad. It’s funny how our tastes and palates change.  The thought of opening up a can of tuna just isn’t really appealing to me.  As much as it was a staple in our pantry growing up, these days, I crave fresh ingredients more often.

You all know how crazy I am about salmon.  We enjoy salmon at our home at least once a week and I always double the amount because I know it will make great reinvented leftovers for lunch or dinner the next day.  We love Teriyaki Salmon, YUM YUM Salmon, Salmon Quesadillas,  Salmon poached in wine and salmon salad.  Yep, in our house Salmon Salad has replaced Tuna Salad as a favorite.  I especially love it over fresh tomatoes.  You know, the ones that you pick up and they smell so good.  The smell of tomatoes is one of my favorite smells.  If you can get your handles on yellow tomatoes, you must try them.  They are a little less acidic and oh so sweet!  Add some fresh pea pods and simple vinaigrette or champagne vinaigrette to your salad and you will enjoy a salad similar to those served at the best of restaurants!

Champagne Salmon Salad #SundaySupper

Ingredients

  • 2 Tomatoes, red or yellow *always smell them first, you will know immediately if they are ripe
  • 6 ounces of grilled or poached Salmon
  • 2 tablespoons of crumbled Feta Cheese
  • 8 Peas, removed from fresh Pea Pods
  • 2 Green Onions chopped fine
  • Salt and Pepper to Taste
  • Olive Oil & Balsamic Vinegar to drizzle or Champagne Vinaigrette

Instructions

  1. Slice Tomatoes into approximately 1/8 inch thick and plate
  2. Shred Salmon and place on top of Tomatoes
  3. Crumble Feta Cheese and sprinkle on top to the Salmon and Tomatoes
  4. Sprinkle Peas and Green Onions on top of salad
  5. Season with Salt and Pepper and drizzled with Olive Oil & Balsamic Vinegar or Champagne Vinaigrette

    Oh this sounds heavenly! My FIL ate his tuna with just mayonnaise too. One time I went to add pickles and he completely freaked out…LOL Good times. I can’t wait to try your recipe.

    I love the idea to change it up with Salmon! Growing up tuna salad stuffed tomatoes were a staple at out house. Love the yellow ones.

    This would be such a fancy starter to a dinner party. I usually grill salmon on cedar planks but a poached salmon would be great over fresh tomatoes. Great recipe!

    I’ve never had salmon salad but ate plenty of tuna fish salad as a kid also. I still love a good tuna salad with onions, pickles, hard boiled eggs on toast.

    anything Salmon is probably my most favorite meal. I love using leftover salmon in Salads & for making Salmon Cakes the next day.
    Thanks for the tip on Yellow Tomatoes…. I’ve had to cut out tomatoes in my diet because they have high acidic levels. I adore yellow tomatoes…I’ll be welcoming them back onto my plate.

    I would pair this lovely salad with a Chablis. I love salads with Chablis!

    I remember our 5:00 dinner hour. we were in trouble if we weren’t at the table at that time.

    We love salmon in our household too. This salad is so simple but I can imagine the freshness of it all!

    You know, I LOOOOOVE salmon…but the only other person in this house who will eat it is my sweet 8-year old! Not the hubs or the older kids. I will have to make a special lunch just for us with this tempting salad. Beautiful twist on a retro classic, Isabel!

    My mom also used to love tuna fish sandwiches when I was a kid…and I never could get over the smell! What is funny is that she used to make tuna noodle casserole all the time…but would call it chicken noodle casserole and would just not tell me that it was tuna. Annnnd I willingly ate it every time and loved it. Go figure.

    Love your refreshed version of a retro tuna salad. I too am a salmon lover (not always, just as of the past 10 years) and adore the idea of serving it over some fresh tomatoes. Lovely. I’ve never had a yellow tomato but this summer, it will be on my list of new things to sample via your recommendation. This dish looks so light and flavorful!! YUM!

    Tuna was a staple growing up, but have had a long love affair with salmon – especially since we get them fresh off the coast here. This is a perfect make-over of the tuna sandwiches we all grew up with (sans any veggies) 🙂

    This salad looks wonderful! I love making salmon salad with leftover salmon, assuming any survives to the next day! I must confess, I still enjoy tuna/mayo wrapped in a soft piece of white bread. My husband, who doesn’t eat seafood, will eat tuna salad, like his mother prepared–with a dash of thyme. It’s funny how we remain so particular about certain things.

    I also ate tuna with just mayo as a kid. In fact, I made it like that until my husband started adding salt, pepper, and pickles to it! Your salmon salad sounds tasty.

    I wish my daughter could eat fish. She loved it but then she became allergic 🙁 She’s a huge tomato fan though and I bet she would love this without the fish. It looks so simple and divine.

    Salmon is one of the ingredients that I miss the most here in India. They have started to sell it here but triple the price compared to europe and then too not fresh at all. Your Salmon salad is a great snack idea. I d be takings little bites already while making your salad. ^.^

    Believe it or not but I usually eat tuna salad 2-3 times a week. It’s easy and I know it isn’t a calorie bomb lunch! I love your update, the flavors are bright and refreshing.

    Our tuna salad was (and still is) made with sweet pickle cubes, boiled egg, mayonnaise, and a dash of yellow mustard. Occasionally I change out and use dill pickle cubes. My nephew even adds a tiny bit of ketchup.

    Your salmon salad is so much fresher than the heavy mayo tuna salad. Nice simple dressing.
