Moist Pumpkin Bread Recipe by Reis

It’s that time of the year where Orange is in the air.   Every year we carve our pumpkins and wonder what to do with the inside.  This year, Reis found a recipe and surprised the family by making Moist Pumpkin Bread.  Like his mom, Reis has a hard time following recipes so of course he had to adapt it.   This pumpkin bread was not only moist, it was heavy and oh so good!

Moist Pumpkin Bread

This Moist Pumpkin Bread is perfect with a cup of coffee or for dessert.
Ingredients
  • 3 ½ C. flour
  • 3 C. sugar
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 4 eggs, beaten
  • 2 C. pureed pumkin or canned pumpkin
  • ⅔ C. water
  • 1 C. canola oil
Instructions
  1. Shift together flour, sugar, salt, baking powder, baking soda, salt, and spices into a large mixing bowl. Add the eggs, pumpkin, water, and oil. Mix together until the batter is well blended.
  2. Pour the batter into two greased and floured loaf pans.
  3. Bake at 325 degrees for about one hour. Test with a toothpick inserted into the center of the bread. If the toothpick does not come out clean, bake at five minute intervals until done.
  4. Remove the pumpkin breads from the baking pans while still warm.

Recipe adapted from Food Network Recipe. We did not use nutmeg or cloves in this recipe because we wanted to make it kid friendly and it sure was.

    Mmmm…this sounds like the perfect loaf to wrap up and take along when cavorting outside on a cool, crisp Autumn day – absolutely beautiful. Definitely going on my to-make list…with all the spices (cuz my kids actually love all the fall goodies with those warming spices flavoring them)!! 😀
