Curry Chicken RecipeGood Morning~ It’s Monday.  Do you see the big smile on my face?  I love Monday’s because it’s a new week full of inspiration and I am usually pumped up from a wonderful Sunday Supper around the family table.  Yesterday’s #SundaySupper was no different.  Who knew we could have so much fun with the color orange?  Well, our wonderful hostess,  Pam from The Meltaways, sure did.  She did an amazing job planning and hosting this fun event.  You have to head over to her site and check out her Spooky Stuffed Peppers.  They are seriously the cutest thing I have ever seen.

What’s cooking Around the Family Table:

I will also be teasing you with some Serious Sandwiches this week.  I was honored to be selected to participate in Emeril Lagasse’s Serious Sandwich Cookalong.    We love this Portuguese Celebrity Chef at our house and Reis and I have had so much fun preparing his recipes.  Last week, we tried Emeril’s Smoked Salmon Bagel with Mascarpone Cheese (my pick) and Croque Madame on a Croissant (Reis’s choice) and let me tell you they were FAB-U-Lous!  Emeril’s Kicked-Up Sandwich cookbook is awesome and I will be giving one away.  All you have to do is tell me your favorite Emeril recipe for a chance to win.

You all know how much I adore our Sunday Supper contributors.  I am honored to feature Laura, from Small Wallet Big Appetite this week.  I love her blog and her mission to love food without hurting the budget.   It is so true that our meals are such a big part of our lives.  I love this recipe because I know it is one that my kids will love and I can prepare it and get it them to practice on time.  It is a perfect Weekday Supper for busy families like ours.

Laura’s post truly shows what is at the core of our Sunday Supper mission.  Time around the family table is where memories are made and where the future of our children is formed.  Reading Laura’s post reassured me of the importance of our mission to Bring Back Sunday Supper Around the Family Table.  It starts as one day a week and soon becomes a way of life.  Food is love and our families appreciate and will remember our efforts.

I was introduced to Isabel’s vision, Sunday Supper, through another blogger. Isabel’s vision of getting people to get back around the family dinner table was in line with my beliefs and my passion for showing people how cooking at home can also save your family money. I have just loved getting to know her and the other members of the Sunday Supper crew each week as we share our inspiration to get families to start eating together again.

Today I wanted to talk to you about my mom who is my cook hero, but she isn’t my cook hero for reasons that you might think. You see cooking is my passion, I lay awake at night thinking about different dishes I want to try, planning posts and food get togethers. It is my passion, so it is a no brainer that I do all of the cooking in the family. But you see my mom does not feel the same way, for her cooking has always been a chore. So the fact that coming from a family of six and we ate home cooked meals every night makes my mom my hero. It can be very hard to cook when you love it let alone when you hate it. But I never knew what a microwave dinner tasted like until I was an adult and we hardly ever ate out or even ordered a pizza. The fact that my mom wanted to provide us with home cooked meals even though she didn’t enjoy doing it makes her a hero in my book and I wanted to honor her by sharing with you one of her standard meals that she made while I was growing up.

I love this recipe shared by Laura from Small Wallet Big Appetite. There is nothing like a meal filled with memories from your childhood.
Ingredients
  • 2 lbs Chicken, diced
  • 1 onion
  • 3 cloves of garlic
  • fresh ginger, even amount as the garlic, minced (or 1 tsp ground ginger)
  • 2 cardamom pods (1 tsp ground cardamom)
  • 2 cloves
  • 1 tsp cinnamon
  • 1-2 Tbsp curry powder
  • 4 medium sized potatoes, cubed
  • 13.5 oz can of coconut milk
  • 3 Tbsp ketchup
  • 1-2 bouillon cubes
  • salt & pepper
Instructions
  1. Fry onions, garlic, ginger, cardamom, cinnamon and cloves until onions start to brown, about 2-3 minutes. Add meat and curry powder and cook to seal the meat for about 3 more minutes.
  2. Add potatoes, ketchup, coconut milk and bouillon cubes.
  3. Bring to a boil and then reduce heat to low and cook for about an hour. Before you serve try to remove the cloves and cardamom pods, or at least warn your guests they are there. Serve over rice.
