I love waking up on Saturday morning and heading out towards the Farmer’s Market. It is so much fun to walk around, taste new items and see what’s in season. Most of all, I love talking to all the merchants and hearing about what inspires them. I am so excited about this Chicken Bruschetta Recipe because it was created by Reis.
Reis loves joining me and the Farmer’s Market has become a tradition that we look forward to. This week the tomatoes looked absolutely amazing and Reis decided we must try making Bruschetta! Reis worked on the Bruschetta and I worked on Chicken. What a wonderful afternoon we had Around the Family Table creating a new Recipe.

- Bruschetta Recipe
- 8 Vine Ripe Tomatoes diced
- ¼ Cup finely chopped Basil
- ⅓ Cup shredded Parmesan Cheese
- ½ Teaspoon minced Garlic
- 2 Tablespoons Balsamic Vinegar
- 3 Tablespoons Olive Oil
- Sea Salt and Fresh Ground Pepper to taste
- 1 Loaf of French Bread
- Basil Breaded Chicken Recipe
- 6 Skinless bonesless Chicken Breast sliced thin
- 2 Eggs beaten
- ½ cup seasoned Bread Crumbs
- ¼ Cup shredded Parmesan Cheese
- ¼ Cup finely chopped Basil
- 4 Tablespoons Olive Oil
- Salt and Pepper to Taste
- Bruschetta Recipe
- Mix all ingredients together in a large bowl. Cover and refrigerate for 2 hours.
- Slice Bread into ½ inch slices. Brush with olive oil and toast in the oven
- Basil Chicken Recipe
- Pound the Chicken Breast until very thin (this is key to a delicious recipe)
- Mix the Bread Crumbs, Parmesan Cheese and Basil on a plate
- Add Olive Oil to hot skillet
- Dip Chicken Breast in Egg and lightly coat with Bread Crumb mixture on both sides
- Saute in Olive oil until golden brown on both sides and crispy
- Sprinkle with Salt and Pepper
- Bruschetta Chicken Recipe
- Place 6 Toasted pieces of Bread on plate
- Drizzle Juice from the Bruschetta on each piece
- Top with 3 Tablespoons of the Bruschetta
- Sprinkle with more Parmesan Cheese if desired
- I love to serve over a Simple Green Salad
