Happy Mother’s Day friends! I am lucky enough to be hosting a brunch for Maezinha and my Mother-in-law. Holidays are always special but today I feel truly blessed to have my children celebrating with all four grandparents. It is a special day in so many ways.
I am sharing a family favorite recipe -Chicken and Pepper Rice with Fried Egg. It can be whipped up in no time at all. Maezinha taught me the art of making something out of nothing and this is one of those dishes. Maezinha worked full time as a seamstress and many times, she would work overtime and wouldn’t get home until after 6 pm. She also had her own side business and most nights sewed until all hours of the night in order to deliver the perfect outfit to one of her favorite clients. She worked hard so that she could provide a better life for our family but she always made time to make dinner. Every night she created a great meal. Nothing fancy, but we always sat around the table for a simple dinner.
I am so grateful for a role model who set the example to work hard and be passionate about what you do. Above all, make time for your family. It is the best gift we can give our family. Watching my mom with her with her grandchildren is a beautiful thing. 
9 times out of 10 our dinners consisted of some time of rice and a fried egg, it’s a Portuguese thing. Every time I make this Chicken and Pepper Rice with fried it brings back memories of my childhood. That is what it is all about… memories that last a lifetime.

- 2 peppers
- 1 red onion
- 1 tablespoon minced garlic
- 2 tablespoons canola oil
- 1 pound chicken tenders
- 2 cups corn, fresh or frozen
- 2 cups cooked rice
- 2 tablespoons soy sauce
- 2 tablespoons butter
- 4 eggs
- 2 green onions, sliced thin
- Cut the peppers into thin strips and slice the onions in thin slices
- Cut the chicken into small cubes
- Add the canola oil, chicken and garlic to a large skillet
- Sauté on high until the chicken is no longer pink and has a nice golden coating. Approximately 8 to 10 minutes
- Remove the chicken and keep warm
- Add the peppers, onions and corn and sauté for approximately 5 minutes or until crisp tender
- Add the chicken soy sauce and rice and Sauté for 5 to 8 minutes
- In a separate skillet melt butter and fry the 4 eggs
- Serve the chicken in pepper rice on plates and top with a fried egg
- Sprinkle with green onions
