I have a confession. I am obsessed with cookbooks. My family would probably call me a cookbook hoarder. I am one of those people incapable of walking by a cookbook without picking it up and looking over the recipes. I immediately start to calculate which recipe I would like to try first. Which recipe would please all four of my children?
Cookbooks speak to me when I hold them and flip from page to page. I have my favorites and they are kept on the shelf in my kitchen. Those are the ones that have notes on the pages of the recipes that I have tried over the years. Many times, I make substitutions in ingredients to please my family. The pages have stains from ingredients that have spilled on them while preparing the recipes. I am not a neat cook. One look at my cookbooks and you know they are loved. All of my other cookbooks are kept in a large bookcase in my office. Those are the ones I turn to when I am looking for inspiration or a special recipe for a special dinner.
Every once in a while, one of those cookbooks makes its way from the office onto the shelf in the kitchen. For some reason, it grabs my attention and I realize that I want to keep it in the kitchen because the recipes are those that I know my family will enjoy. When I opened “Sheet Pan Suppers” by Molly Gilbert, it immediately spoke to me. I knew that this would be one of the cookbooks that would be hanging out in my kitchen. These recipes are the kind that my family would enjoy. And for us, Sheet-Pan Suppers means less clean-up time. My kids, the dish washers of our house, are secretly thanking Molly for her brilliant idea of bringing an amazing meal together in one sheet pan.
“Sheet Pan Suppers” is perfect for the busy household that needs delicious and nutritious meals around the family table with little preparation. I love that throughout the book, substitutions are encouraged. Every mother with a large family to feed will tell you that versatility is the key to a happy family meal. The best tip ever – line the sheet pan with parchment paper or foil rather than a spray. Clean-up is so much easier. My kids think Molly is a genius. While I think versatility and nutrition is important to a happy meal, they will vote for easy clean-up every time.
The first recipe that spoke to me was the Quick Chicken & Baby Broccoli with Spicy Peanut Sauce. I couldn’t wait to try this with my family because it was not a typical dish that I would prepare. I was so intrigued by the Spicy Peanut Sauce and the fact that an entire meal would be broiled in 12 minutes. As it turns out, this recipe is a favorite of Molly’s. During her recent interview with Janet Keeler, Sunday Supper Movement Editorial Director, she shares “I make the chicken with peanut sauce a lot and the fancy tuna melt is a popular one in my house. It was fun to take dishes you don’t normally think of cooking on sheet pan, like chicken Parmesan, ratatouille and fajitas.” I actually tried the Chicken with Spicy Peanut Sauce two ways, with broccoli and with green beans. There are a two members of this household that are not very fond of broccoli. The recipe was a huge hit both ways and having that versatility kept everyone happy.

- Cooking spray (optional)
- 1 tablespoon packed dark brown sugar
- ¼ cup plus 2 tablespoons creamy peanut butter
- 1 tablespoon toasted sesame oil
- ¼ cup low-sodium soy sauce
- 1 tablespoon Sriracha sauce
- 1 tablespoon rice vinegar
- ¼ cup warm water
- 1 tablespoon freshly squeezed lime juice
- 2 bunches broccolini (1 pound total)
- 4 to 6 thin-cut boneless, skinless chicken breasts or cutlets (1 to 1½ pounds total)
- Place a rack 4 inches from the heat source; preheat broiler. Line a sheet pan with foil.
- Whisk together brown sugar, peanut butter, sesame oil, soy sauce, sriracha, vinegar, water and lime juice in a medium bowl until smooth. Set aside ¼ cup of the peanut sauce for serving.
- Brush broccolini and chicken with remaining sauce to coat, and arrange in a single layer on prepared pan. Broil until the chicken is just cooked through, the broccolini is well charred, and the sauce is bubbly and deeply browned, 10 to 12 minutes. Watch closely to prevent burning and flip chicken halfway through.
- Serve the chicken and broccolini hot from the oven with the reserved dipping sauce alongside.
