This week, Sunday Supper is partnering with The Beef Checkoff to develop beef recipes fit for the 30-Day Protein Challenge and I couldn’t be more excited. I recently participated in the Protein Challenge and can tell you first hand that I saw a big difference in my energy level when I made an effort to consume 25-30 grams of protein at each meal. One of the goals of the Protein Challenge is to help you get the optimal amount of protein every day.
I quickly realized that for me, lunch and dinner were a cinch. I had no problem coming up with protein rich recipes for those meals. Breakfast was another story. Through my 30 day journey, I learned that even if I ate two eggs for breakfast, it simply was not enough. So, I started to get creative with my breakfast recipes. I learned that if I planned ahead with leftovers or made a big batch of protein; breakfast could be delicious, nutritious and one that I would look forward to.
The big aha moment – breakfast doesn’t have to be “breakfasty.” It’s okay for me to combine some of my favorite flavors, throw in some veggies and enjoy favorite dishes at breakfast. Out of all the breakfast combinations that I created, this one was by far the winner. It worked perfectly when I prepared a big batch of ground beef and peppers and onions on the weekend and threw it all together in a skillet. While it warmed, I made a quick over easy egg and I couldn’t wait to dig into this Philly Cheesesteak Breakfast Wrap.

- 5 teaspoons olive oil
- ½ pound ground beef
- 3 teaspoons garlic, minced
- 2 peppers, sliced
- ½ red onion, sliced
- 8 slices of provolone or american cheese
- 4 eggs
- 4 flour tortillas, medium
- Heat a large skillet on medium high and add 2 tablespoons olive oil.
- Stir in the ground beef and garlic. Continue to stir until the beef is cooked all the way through and is no longer red.
- Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
- Add 2 additional tablespoons of olive oil to the skillet.
- Stir in the peppers and onions and sauté until the onions are caramelized and the pepper are soft.
- Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
- Add ¼ of the beef, ¼ of the peppers and onions back into the skillet and add 2 slices of provolone or american cheese.
- Stir until the cheese is melted.
- In a separate skillet add one tablespoon of olive oil and cook one egg over easy. Slightly browned on both sides but still runny in the middle.
- Place one of the flour tortillas on a large plate and add ¼ of the beef, peppers and onions to the middle.
- Top with the egg and roll.
- Cut the tortilla in the middle and enjoy these delicious breakfast sandwich.
- Repeat 3 more times during the week by reheating ¼ portion the beef, peppers and onions and adding an over easy egg.
This Philly Cheesesteak Breakfast Wrap combined my love for Philly Cheesesteaks and runny eggs. You may have noticed that I am a tad obsessed with both. I also noticed that my energy level didn’t fall off half way through the day. As a busy mom, business owner and blogger – halleluia! It made me realize there is some truth to the old saying “breakfast is the most important meal of the day.” It doesn’t have to be boring, it can be delicious and nutritious.
