Zucchini Tomato Focaccia Bread with Pretzel Salt #SundaySupper

As most of you know, I would never consider myself a baker. I truly find that it says something about your personality. Most bakers have a personality that is very precise, consistent, they tend to me rule followers. Those more creative soles like me, like to throw in a little bit of this and a little bit of that. We don’t like to be told what to do. Unfortunately in baking, our creative personalities tend to lead to a lot of failures.

My love for bread is the reason why every once in a while, even I bake. Either that or the fact that I purchased that large bread machine for $5 at our church flea market. The fact that it takes up so much room, makes me feel guilty if I don’t use it every once in a while. Yep, this second hand bread machine has shamed me into baking a couple of bread recipes. Two of our family favorites are Portuguese Chorizo Bread (usually made by Vo-Vo) and the Potato, Cheese and Mushroom Focaccia Bread. Lately I have been craving veggies and so this beautiful Zucchini Tomato Focaccia Bread was created.

You may be tempted to use sea salt on the crust instead of the pretzel salt. Trust me, I tried it. Sea salt will bake into the bread, the pretzel salt is the perfect addition to make this Zucchini Tomato Focaccia Bread a true standout.

Zucchini Tomato Focaccia Bread with Pretzel Salt #SundaySupper

Ingredients

  • 4 cups all-purpose flour
  • 1 1/2 cups lukewarm water, plus
  • 3 tablespoons lukewarm water
  • 5 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 tablespoon onion powder
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 tablespoon yeast
  • 2 teaspoons oregano
  • 1/2 teaspoon black pepper
  • Topping:
  • 1 zucchini, sliced thin
  • 1 large tomato, sliced thin
  • 1/2 cup Gruyère cheese, cheddar cheese can also be used.
  • 2 green onions diced thin
  • pretzel salt and fresh ground pepper to taste

Instructions

  1. Put the 1 1/2 cup water in the bread machine.
  2. Add the other ingredients in this order: sugar, salt, oil, flour, yeast, garlic powder, onion powder, oregano and black pepper.
  3. Place bread machine on dough setting and start.
  4. Note the amount of time your bread machine will take and set another timer for this amount (or do it manually, I use the timer on my microwave for for this).
  5. As soon as the dough forms a ball (several minutes) add the 3 tbsp lukewarm water.
  6. If it's getting too high, just stop the dough cycle and restart it (this is why the other timer is needed).
  7. At the end of the time (on my machine it is 130 minutes) turn off the bread machine and remove the dough.
  8. Grease a large pizza pan or 2 small pizza pans and turn the dough out on it
  9. Spread the dough evenly on the pan, making it higher on the edges of the pan for a crust.
  10. Cover with plastic wrap and let rise.
  11. Approximately 15-20 minutes.
  12. Brush the dough with olive oil and sprinkle with oregano and garlic powder.
  13. Layer the zucchini, tomato and Gruyère cheese
  14. Sprinkle with the diced green onions
  15. Wet the raised edges with your fingers dipped in water and sprinkle the pretzel salt around the edges
  16. Bake for approximately 20 minutes at 350°F or until the cheese is bubbling and the bread is a golden brown.

    I have a bread machine that also shames me into making bread a couple times a year! And a Sous Chef that reminds me how many kitchen items I have that take up too much room.

    I must be a special kind of baker because I don’t like to be told what to do or follow rules yet I love to bake LOL I hear ya on the bread maker. I got mine for $1.50 at a flea market a long time ago when I was in college (I was a weird college girl). It’s been with me a long time but finally gave it a good home during my recent move in July. I loved it, really I did, but I rarely used it anymore and to lug that thing 3 hours across state… Plus I prefer to bake my bread by hand (stress reliever 😀 ) Gorgeous bread! Wish I had this for dinner coming up soon.
