Slow Cooked Pork Peppers and Onions #SundaySupper

Ingredients
  • 4 pound Pork Roast
  • ¼ Cup Olive Oil
  • 2 Red Onions, sliced thin
  • 4 Peppers, sliced into strips. I like to use Red, Green, Orange and Yellow but you can use any color
  • 3 Bay leaves
  • 1 tablespoon chopped Parsley
  • 3 cups of White Wine or Chicken Broth
  • Sea Salt and Ground Pepper to taste
Instructions
  1. Preheat oven to 250 degrees
  2. Place the Pork Roast in a large oven proof baking dish
  3. Brush the Pork with Olive Oil
  4. Season the Pork with Sea Salt and Ground Pepper
  5. Layer the Peppers and Onions on top of the Pork Roast
  6. Add the Bay leaves under the Peppers and Onions and sprinkle with chopped Parsley
  7. Pour the White Wine or Chicken Broth to the side of the Pork Roast. Do not pour over the top of the Pepper and Onions and seasoning. You don't want to remove the Olive oil and seasoning from the Pork
  8. Cover with lid or aluminum foil and bake for 5.5 hours
  9. Raise the temperature to 400, remove the peppers and onions and bake the Pork Roast for 30 more minutes until the top is browned
  10. Serve over Rice
