Philly Cheesesteak Breakfast Wrap #SundaySupper

Ingredients
  • 5 teaspoons olive oil
  • ½ pound ground beef
  • 3 teaspoons garlic, minced
  • 2 peppers, sliced
  • ½ red onion, sliced
  • 8 slices of provolone or american cheese
  • 4 eggs
  • 4 flour tortillas, medium
Instructions
  1. Heat a large skillet on medium high and add 2 tablespoons olive oil.
  2. Stir in the ground beef and garlic. Continue to stir until the beef is cooked all the way through and is no longer red.
  3. Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
  4. Add 2 additional tablespoons of olive oil to the skillet.
  5. Stir in the peppers and onions and sauté until the onions are caramelized and the pepper are soft.
  6. Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
  7. Add ¼ of the beef, ¼ of the peppers and onions back into the skillet and add 2 slices of provolone or american cheese.
  8. Stir until the cheese is melted.
  9. In a separate skillet add one tablespoon of olive oil and cook one egg over easy. Slightly browned on both sides but still runny in the middle.
  10. Place one of the flour tortillas on a large plate and add ¼ of the beef, peppers and onions to the middle.
  11. Top with the egg and roll.
  12. Cut the tortilla in the middle and enjoy these delicious breakfast sandwich.
  13. Repeat 3 more times during the week by reheating ¼ portion the beef, peppers and onions and adding an over easy egg.
