- 5 teaspoons olive oil
- ½ pound ground beef
- 3 teaspoons garlic, minced
- 2 peppers, sliced
- ½ red onion, sliced
- 8 slices of provolone or american cheese
- 4 eggs
- 4 flour tortillas, medium
- Heat a large skillet on medium high and add 2 tablespoons olive oil.
- Stir in the ground beef and garlic. Continue to stir until the beef is cooked all the way through and is no longer red.
- Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
- Add 2 additional tablespoons of olive oil to the skillet.
- Stir in the peppers and onions and sauté until the onions are caramelized and the pepper are soft.
- Remove and set aside. Reserving 3 servings in a container for the remainder of the week.
- Add ¼ of the beef, ¼ of the peppers and onions back into the skillet and add 2 slices of provolone or american cheese.
- Stir until the cheese is melted.
- In a separate skillet add one tablespoon of olive oil and cook one egg over easy. Slightly browned on both sides but still runny in the middle.
- Place one of the flour tortillas on a large plate and add ¼ of the beef, peppers and onions to the middle.
- Top with the egg and roll.
- Cut the tortilla in the middle and enjoy these delicious breakfast sandwich.
- Repeat 3 more times during the week by reheating ¼ portion the beef, peppers and onions and adding an over easy egg.
