| Mexican Pizza with Chipotle Orange Sauce #SundaySupper |
- 2 tablespoons Butter
- 1 sliced Red Bell Pepper
- 1 sliced Yellow Bell Pepper
- 1 large Onion sliced (I love Red or Vidalia)
- 2 tablespoons minced Garlic
- 2 cups of cooked Pork
- 4 Flour Tortillas
- Cilantro to garnish
- For the Sauce:
- 1 Chipotle Pepper in adobo sauce
- 3 tablespoons smoked Paprika
- 1 tablespoon Mayonnaise
- ½ cup Orange Juice (or juice from 2 Oranges)
- ½ teaspoon Orange Zest
- Add Butter to large Sauce Pan and melt
- Add Red Bell Pepper, Yellow Bell Pepper and Onion and cook until soft. Approximately 10 minutes
- Add Garlic and cook for approximately 5 minutes
- Add Pork and simmer for 10 minutes
- For the Sauce:
- Blend Chipotle Pepper, Paprika, Mayonnaise and Lemon Juice in a blender
- Preheat oven to 350
- Place the Pork mixture on top of each Tortilla on a baking sheet
- Bake for approximately 5 minutes
- Drizzle the Chipotle Orange Sauce over each Pizza and bake for an additional 5 minutes
- Garnish with Cilantro
