Happy Father’s Day to all the wonderful dad’s that love, encourage, inspire and make their children feel like they are true super stars every day of their lives! I am blessed to say that I have two amazing men in my life who have encouraged and helped shape not only my journey but the future of my four children.
When the Sunday Supper Family got together and decided on today’s theme, Man Food, what immediately came to mind was — steak. After all, Ron could eat a Rib Eye or New York Strip Steak every day of his life and be completely content. But I decided to share a recipe that Ron and I enjoy together, Burrata Bresaola and Arugula Appetizer. At the risk of having my husband sound like a wimp, I am sharing one of his absolute favorite appetizers/salad.
The reason I chose this appetizer is that instead of it being a favorite that we came up with and created around the family table at home, it is one that was inspired by our favorite local restaurant. This restaurant is our little get-away that is only five minutes from home, but we love going there together and enjoying this appetizer and a glass of wine. It is our time away from the kids. I honestly feel that it makes us better parents. It is “Our Time.”
Ingredients
- 1/4 pound thinly slice bresaola
- 2 cups of baby arugula
- 8 oz. burrata cheese or fresh mozzarella2 tablespoons shaved Parmesan cheese
- 1 juice from one small lemon
- 4 Tbsp Great Quality Extra Virgin Olive Oil, divided
- 1/4 tsp. fresh ground pepper
- 1/4 tsp. sea salt - my favorite is truffle sea salt
Instructions
- on a large plate or platter, layer the thin slices of bresaola
- place the baby arugula in the middle of the bresaola and add the burrata on top
- squeeze the juice of one lemon and drizzle the olive oil over the burrata, arugula and bresaola
- sprinkle with fresh ground pepper and truffle sea salt
- serve with crusty bread and your favorite wine

Lastly, I have simply fallen in love with bresaola after my 2 weeks in Italy in May. Where in the world do I find it in the States?
