Warm Shrimp and Avocado Salad #WeekdaySupper #ChooseDreams

One of the things that I love most about what I do is traveling and meeting people that I work with from all over the country. I had the honor of working with American Family Insurance at their Dream Bank this past weekend and I can tell you that I have fallen in love with Madison, WI. The people, the food and the farmer’s market. It is truly an amazing place.

I love being inspired by my travels and this Warm Shrimp and Avocado Salad came about after a to  Miami– once I figured out how to make it at home, we have had it almost every week. It is so easy and so delicious and we absolutely love the addition of avocados!

It’s true that we can find inspiration anywhere. I love returning from a trip and sitting around the family table chatting with my kids about what I have learned from different areas of the country. I hope to inspire them to #ChooseDreams and live a healthy lifestyle.

Warm Shrimp and Avocado Salad

Warm Shrimp and Avocado Salad

Ingredients

  • 1 pound large shrimp
  • 1 shallot sliced thin
  • 1 tablespoon olive oil
  • 2 cups white wine - I used Gallo Family White Wine Blend
  • 1 teaspoon chopped garlic
  • 1bay leaf
  • 1 Tablespoon white truffle oil (if desired)
  • 4 cups mesclun greens
  • 1 roasted red pepper (jarred)
  • 1 avocado, peeled and thinly sliced

Instructions

  1. In a large skillet, heat 1 tablespoon of the olive oil.
  2. Add the shallot and cook over moderately low heat until softened, about 1 minute.
  3. Add the shrimp to the skillet and quick sear on both sides, about 1 minute on each side.
  4. Remove the shrimp, cover and keep warm.
  5. Add the white wine and bay leaf. Simmer until the wine is reduced in half.
  6. Turn off the stove and drizzle in the truffle oil if desired. (I have tried it both ways and it is delish with or without the truffle oil)
  7. Plate the avocado, mesclun green and roasted red pepper and add the shrimp on top
  8. Season the dressing with salt and pepper,pour it over the salad and serve.

    Before going to Dream Bank I had a pretty good understanding of what Choose Dreams meant. But after actually being there I was amazed how Dream Bank really helps people with there dreams. I was amazed and simply honored to be a apart of the trip.
