Broccolini Macaroni and Cheese #SundaySupper

I have a little secret to share with you today, everything tastes really good if you add macaroni and cheese to it. You can’t imagine all the things that I have snuck into macaroni and cheese that my kids would never eat.  I know what you are thinking; my family would never eat broccolini. But if you sneak it into this delicious and creamy Broccolini Macaroni and Cheese, they just might.

This is such a great dish to serve when entertaining. If you try it, bake them in individual ramekins and I promise your guests will be impressed.

Broccoli Rabe Macaroni and Cheese

Broccolini Macaroni and Cheese #SundaySupper

Prep Time: 45 minutes

Yield: 6

Broccolini Macaroni and Cheese #SundaySupper

Ingredients

  • 1 pound elbow macaroni, I prefer the large macaroni
  • 1 bunch of Broccolini, chopped (approximately 3 cups)
  • 2 tablespoons of butter
  • 1/4 cup of sweet onions, chopped
  • 1 teaspoon minced garlic
  • 4 tablespoons all purpose flour
  • 2 cups of 2% milk
  • 2 cups of white wine - I used Gallo Chardonnay
  • 2 cups of cheddar cheese cheese, shredded
  • Sea salt and fresh ground pepper to taste

Instructions

  1. Bring a large pot to water to a boil. Add the macaroni and cook at a boil until just tender or al dente
  2. Drain, rinse in cold water and set aside
  3. Preheat the oven to 350 degrees
  4. In a large skillet or frying pan, melt 2 tablespoons of butter
  5. Add the onion and garlic mixture
  6. Cook on medium heat until the onion and garlic turn slightly brown, approximately 5 minutes
  7. Add the broccolini and cook for an additional 12 minutes
  8. Add the flour and stir constantly for another 5 minutes
  9. Add the milk gradually while stirring
  10. Add the chardonnay wine and continue to stir until the mixture starts to thicken but is very smooth
  11. Reserve 1/2 cup of cheddar cheese and add the remaining cheddar cheese while stirring
  12. Season to taste with fresh ground sea salt and pepper
  13. Stir in the Pasta
  14. Butter a 13x9x2 baking dish, round pie dish or 8 small ramekins to make individual portions
  15. Add the macaroni mixture and sprinkle with the cheddar cheese
  16. Bake for approximately 20 minutes or until the cheese is bubbling
  17. Serve immediately

    I think I must have been the only child on earth to like broccolini! hahaha
    My kids don’t like them… but your recipe is a great idea to get them to eat some!

    Your so right, Isabel. macaroni and cheese is a gift from Heaven…Like Manu, I also have always loved broccolini….But for my husband and nieces and nephews, I believe your scrumptious solution is the perfect way to sneak, I mean serve up some extra good for you vitamins!

    I am fortunate that my girls love their greens, even spinach, kale and collard greens so I don’t HAVE to sneak them in. Sometimes I just like to. 🙂 Your macaroni and cheese with broccolini would be a favorite on my plate, Isabel!

    Oh man, somebody else knows about this little mac & cheese secret? 🙂 I’ve never used white wine in my mac before, though. I’m sure it adds a bright touch of acidity, it must be so tasty!

    You are so right, Isabel. Everything is better with some mac ‘n cheese. I love this dish – I’ll bet the kids would love this dish the next time they come to visit. It looks perfect to me. And I love you used Gallo wine in it!!!!

    I love adding veggies to casseroles or mac and cheese. Even if it’s not to sneak them in just for the fact that it adds a little something extra to it. This looks delicious and now I’m craving some mac and cheese.

    Mac and cheese is one of those magical foods–I once made a mac and cheese using up leftover ham with blue cheese… even the blue cheese haters loved it! I can’t wait to try this one!
