I have a little secret to share with you today, everything tastes really good if you add macaroni and cheese to it. You can’t imagine all the things that I have snuck into macaroni and cheese that my kids would never eat. I know what you are thinking; my family would never eat broccolini. But if you sneak it into this delicious and creamy Broccolini Macaroni and Cheese, they just might.
This is such a great dish to serve when entertaining. If you try it, bake them in individual ramekins and I promise your guests will be impressed.
Ingredients
- 1 pound elbow macaroni, I prefer the large macaroni
- 1 bunch of Broccolini, chopped (approximately 3 cups)
- 2 tablespoons of butter
- 1/4 cup of sweet onions, chopped
- 1 teaspoon minced garlic
- 4 tablespoons all purpose flour
- 2 cups of 2% milk
- 2 cups of white wine - I used Gallo Chardonnay
- 2 cups of cheddar cheese cheese, shredded
- Sea salt and fresh ground pepper to taste
Instructions
- Bring a large pot to water to a boil. Add the macaroni and cook at a boil until just tender or al dente
- Drain, rinse in cold water and set aside
- Preheat the oven to 350 degrees
- In a large skillet or frying pan, melt 2 tablespoons of butter
- Add the onion and garlic mixture
- Cook on medium heat until the onion and garlic turn slightly brown, approximately 5 minutes
- Add the broccolini and cook for an additional 12 minutes
- Add the flour and stir constantly for another 5 minutes
- Add the milk gradually while stirring
- Add the chardonnay wine and continue to stir until the mixture starts to thicken but is very smooth
- Reserve 1/2 cup of cheddar cheese and add the remaining cheddar cheese while stirring
- Season to taste with fresh ground sea salt and pepper
- Stir in the Pasta
- Butter a 13x9x2 baking dish, round pie dish or 8 small ramekins to make individual portions
- Add the macaroni mixture and sprinkle with the cheddar cheese
- Bake for approximately 20 minutes or until the cheese is bubbling
- Serve immediately
I have to admit, I am guilty of not serving meatless dishes very often at our house.
