There is something about Baby and Wedding Showers. Is it the waiting, is it the anticipation, is it that it feels like a new beginning? It’s hard to put our finger on it but there is something just so exciting. I love being part of any type of Shower and was so excited when Brandie from Home Cooking Memories suggested this week’s fun Sunday Supper theme – Baby and Wedding Showers.
You can’t have a Baby and Wedding Shower without the Punch, the Party Favors and the Games. But for me, you can’t have a shower without the Quiche. I love Quiche and think it is the perfect food for entertaining. You can make it ahead of time and lightly warm it up. One of my favorite Quiches is Spinach, especially a good Crustless Spinach Quiche!
This Recipe for is so simple. It is not a fluffy and high Quiche, but more of a Custard Quiche. I just love the consistency of it and get rave reviews when I make it for company.


- 4 large Eggs
- 1 cup Milk
- 1 bag Fresh Spinach or 1 package of Frozen Spinach, drained
- 1 8 ounce package Mozzarella Cheese
- Salt & Pepper to taste
- Beat the Eggs and Milk until well blended.
- Gently add the Spinach and the Mozzarella Cheese
- Pour into Quiche Pan or Tart Pan
- Bake at 350 degrees for 35 minutes
