Easy Salmon with Tomatoes Onions Olives and Capers

Easy Mediterranean Salmon

You all know how much I love Salmon and could eat it almost every day of the week.   I have this one recipe that always WOWs my friends and family.  It is one of those recipes that just looks so pretty, that you can cut and serve at the table.  My Salmon with Tomatoes, Onions, Olives and Capers is truly a conversation piece.  The layers of flavors come together to create a memorable experience in your mouth.  My friends think I have slaved for hours over this Salmon Recipe but between you and me, it is one of the easiest recipes you can make.

To me serving Salmon, is similar to Steak.  Everyone likes it done a little different.  Some like Salmon well done, others like it rare.   Using a whole Salmon Fillet allows you to ask your guests how they would like their Salmon.  My parents love the Salmon well done but I love it rare.  They choose to have the thinner end, while I always choose the thick center piece.

This recipe is not only nutritious and memorable, it makes guests feel special when you are entertaining because you are giving them options as you carve the Salmon tableside.  I love to serve this Salmon with Portuguese Rice or Tomato Feta Orzo Salad along with a Simple Green Salad.

The best part about it, I always seem to make too much (I’ve told you about that issue that I have when entertaining) so the next day, I can make Salmon Salad, Yum Yum Salmon Quesadillas or Salmon Cakes.  Have I told you how much I adore Salmon and can eat it every day of the week?

Easy Salmon with Tomatoes Onions Olives and Capers

Easy Salmon with Tomatoes Onions Olives and Capers

Ingredients

  • 1 large Salmon Fillet, skin removed
  • Olive Oil to brush on the salmon
  • 1 large Tomato, sliced
  • 1 small Onion, sliced and cute into rounds
  • 8 Stuffed Olives, sliced (I love Intensity Academy Spicy Infused Olives)
  • 2 tablespoons of Capers
  • Sea Salt and Fresh Ground Pepper to taste

Instructions

  1. Lay the Salmon Fillet on a large baking sheet (I ask my grocer to remove the skin for me)
  2. Brush entire Salmon Fillet with Olive Oil
  3. Layer the Tomato, Onion and Olives over the Fillet
  4. Sprinkle the Capers over the entire Salmon
  5. Season with Sea Salt and Fresh Ground Pepper
  6. Bake at 375 for approximately 30 minutes depending on thickness

    Oh, I love the Mediterranean twist on this salmon…one of the only fishes the hubby will eat. This will definitely make my Lenten rotation 🙂
