Stoplight Salsa | Mexican Fiesta #SundaySupper

Stop Light SalsaI know, it is probably really obviously, I love any excuse to get together with family and friends.  Can you imagine how excited I was when girlichef  suggested a Mexican Fiesta for our Sunday Supper theme?  I was all in!  My boys actually love Mexican Cuisine and Reis was ready to help me in this challenge…. it was time for a Reis-ipe.   Reis developed the perfect recipe for this special Sunday Supper, Stoplight Salsa.  Who could resist these beautiful peppers from the farmer’s market?  They were just gorgeous and screaming… take me home for Sunday Supper!

Stoplight Salsa

Reis loves making this Stop Light Salsa. It is perfect for kids because it is not to too or spicy. We love it over grilled fish and chicken.
Ingredients
  • 4 Tomatoes, chopped
  • 1 Red Onion, chopped
  • 1 Green Pepper, chopped
  • 1 Yellow Pepper, chopped
  • 1 Red Pepper, chopped
  • 4 Garlic Cloves, chopped
  • Juice from 1 lime
  • ½ teaspoon paprika
  • ½ teaspoon salt
Instructions
  1. Mix all ingredients together and refrigerate overnight.
  2. Serve with Tortilla chips or over fish or chicken. Delish!
