| Veggie Stuffed Red Pepper |

- 1 red pepper
- 2 tablespoons black bean hummus
- ⅓ cup spinach
- ¼ cup red onions
- ¼ cup carrots
- ¼ cup celery
- ¼ cup broccoli
- ½ cup alfalfa sprouts
- ½ of a lime
- Cut top of red pepper off and remove seeds
- Spread hummus to cover the inside of the red pepper
- Chop spinach, red onions, carrots, celery, broccoli and alfalfa sprouts
- Put all the vegetables in the red pepper
- Squeeze lime juice on top
