Spicy Mango Jam #SundaySupper

Spicy Mango Jam

This Summer, we have been particularly taken with mango flavors. Mango on fish is a huge favorite of mine. And just this past weekend, I tried a mango bread pudding that was to die for. To.Die.For. I would never have thought to top bread pudding with fresh mango but it was just incredible. You know I will be trying to reinvent that bread pudding at home very soon. Stay tuned.

When asked what I wanted to preserve from this summer, it only seemed natural that mango be a part of it. There are so many great uses for mango and if I could just save that flavor to use throughout the year, I know I could jazz up simple dishes to be spectacular. This Spicy Mango Jam with jalapeno is packed with flavor and does just that. It will take an ordinary dish and suddenly it is a gourmet experience. It really has that much punch.

Baked brie is always a favorite of mine when entertaining friends. You haven’t lived until you slice off the top of the brie and bake it with the Spicy Mango Jam on top. Kick it up another notch by adding shaved coconut and shaved almonds. Serve it with graham crackers for an unexpected sweet, spicy and savory taste that will have your guest wanting to know how to make this delicious appetizer.

Ingredients
  • 3 Cups Mango, Diced
  • 2 Medium Jalapenos , Diced and Seeded
  • 1 ½ Cup Honey
  • 1 ⅔ Cup Sugar
  • 1 Cup Water
  • 2 Tablespoon Apple Cider Vinegar
  • 2 Tablespoons Lime Juice
  • 1 ¾ oz Packet Pectin
  • 2 Tablespoons Sugar
Instructions
  1. Combine first 6 ingredients in blender
  2. Puree until smooth
  3. Transfer to pot and bring to a boil
  4. Whisk together pectin and remaining sugar
  5. Add to mango mixture
  6. Bring to a boil while stirring
  7. Transfer to containers for refrigeration or can
