Panko Meatballs in Ponzu Sauce

I thought I had prepared my list and had everything checked off when my daughter left for college.  I was tapping myself on the back thinking I had sent her with everything she needed.  She made it through her first semester without calling home in a panic that she was missing something!

Well, now in her second semester, it happened! She called me very excited that she had gotten a job. The only thing she was missing was her Social Security Card.  It had never occurred to me to send her actual card with her. Isn’t everyone afraid to lose those?

I was going to overnight it…but just thinking of her made me realize how much I missed her.  She’s only two hours away…. so I drove and spent the afternoon with her.   Sometimes, it really works to our advantage to be unprepared…I’m so glad I had an excuse to spend the afternoon with my College Foodie!

Everyone who has a College Student knows, they love to get home cooked meals.  So, I got up early and wanted to make something special for her.  She loves loves loves meatballs.  I thought about making her  Family Foodie Traditional Meatballs or Portuguese Meatballs.  But the apple doesn’t fall far from the tree… this girl is a total Foodie and loves to try new recipes.

A new Meatball Recipe was in order!

I looked outside and our Orange Tree was full of juicy oranges just waiting to be picked.  Panko Bread Crumbs were calling my name from the pantry… Panko Crusted Meatballs in a Ponzu Sauce were born!

I was a terrible Mother once again, I pulled Reis out of school to keep me company for my two hour ride.  Every once in a while breaking the rules, even as a Mom, is just fun.  Reis was as happy as I was to go visit his big Sister.

We had a great afternoon with Alexandra and her friend Leigh.  As much as I would love to have her Around the Family Table at our home,  I know she is where she is meant to be.  She is happy, she is blossoming, she is maturing, she is figuring life out on her own!

The best advice anyone has ever given me is…let your children go away to college but not too far away.  There is nothing like being able to spend the afternoon with my daughter.

PANKO CRUSTED MEATBALLS IN PONZU SAUCE

  • 2 lbs. ground Pork
  • 2 slices of white bread soaked in milk
  • 1  1/2 cups of Panko Bread Crumbs plus extra to coat the outside
  • 2 teaspoons Garlic
  • salt and pepper to taste 
  • 1/2 cup Ponzu Sauce
  • 1 cup White Wine
  • juice from 1 Orange 
  • juice from 1 Lemon
Preheat Oven to 375
Mix ground Pork, white bread soaked in milk , Panko Bread Crumbs, Garlic and Salt and Pepper 
Form into round Meatballs 
Roll in additional Panko Bread Crumbs
Place on glass baking dish and bake for 40 minutes
Combine Ponzu Sauce, White Wine, Orange Juice and Lemon Juice 
Heat on Medium until reduced and slightly thick
Drizzle Ponzu Sauce over Meatballs

    ooh Isabel ! This looks absalutely delish !! I will try this out ! Wondering where to get the Ponzu sauce though ! Will google it , no worries … Pic is absalutely fab too ! My mouth is watering … I should probably get off this page 😉

      Thank you Sunithi…it is sooo good! You can get Ponzu Sauce at almost all grocery stores. It is found where the soy sauce is. Let me know if you find it!

    Quick question about portioning:
    How big was each meatball? If they’re meal-sized, should I assume fist-sized meatballs, or would something with roughly the same diameter of a quarter be more accurate?

      I would say they were about the size of a poker chip. Hope that help!

    How lucky to have an orange tree in your backyard. I’m a meatball fanatic. These look delicious and I love the citrus twist.

    Meatballs are wonderful! I love how versatile they are. This recipe looks great. I’ll have to save the tip about college students for another 10+ years. My oldest is just finishing Kindergarten and I’m in no rush to send him off anywhere.

    These sound yummy! I’ll just do some minor tweaking for our gluten free, mammal free diet, but I love the idea of the citrus twist! Yum!!

    These look delicious. I don’t know if I have ever had ponzu sauce, but anything with citrus sounds like a winner to me.
