Today on Family Foodie Featured Friday: Lori from Foxes Love Lemons
Who is Lori: My name is Lori, and I’m a food writer, photographer, recipe developer and the creator of Foxes Love Lemons. I live just outside of Detroit with my engineer husband and our rescue dog, who is prone to mental breakdowns over squirrels, chipmunks and blowing leaves.
While I’d been thinking about starting a food blog for about ten years, it didn’t finally happen until after I quit my job in advertising to go to culinary school (the best decision ever!). I love cooking, but working in a restaurant wasn’t my passion. I knew I needed to find something that combined the three things I enjoyed doing most – cooking, writing, and taking pictures. Oh, and spending time on the internet.
Foxes Love Lemons was finally born in February of 2013, the name being an homage to my maiden name and my favorite flavor. My main goal for my blog is to encourage people to enjoy the act of cooking at home – especially simple yet special meals with lots of flavor.
Her favorite #SundaySupper theme so far: I loved the week of Music Inspired Recipes. It was so amazing to see people’s creativity really shine as they invented recipes based on songs, albums and artists. When the theme was first announced, I thought to myself “I have NO IDEA what I’ll do for this,” but then Banana Pancakes by Jack Johnson came to mind. Since it was the middle of the summer, ice cream was at the top of my to-do list, so my most epic ice cream flavor ever was created: Banana Pancake Ice Cream with Maple Brittle.
Her most popular #SundaySupper post: My most popular Sunday Supper post has definitely been my Guacamole Rice for this year’s Cinco De Mayo theme. When I was creating this recipe, I had a feeling I was on to something, but had no idea it would take off on Pinterest like it did. I love guacamole, and I like rice, and sometimes I mix them together on my plate at Mexican restaurants. I figured, why not really mix them together? I did a few Google searches, but couldn’t find anybody who had made that exact recipe before. So I just went for it, and it became one of my most popular blog posts ever! All of this for a little recipe who’s only instruction is to basically mash all of the ingredients together.
Fun Fact: I LOVE riding my bike! Last summer, I actually rode 1000 miles. I just ride around streets and neighborhoods in Metro Detroit. I don’t always follow traffic laws, but hey, at least I wear a helmet. I was on a mission to get to 1000, so the last month of the summer involved a lot of rides on windy, less-than-stellar days. There was one neighborhood in particular that had recently been re-paved, so I would ride the loop around that neighborhood 3 or 4 times each day to increase my mileage. I’m sure the residents of that street thought I was crazy. But I made it! I didn’t work up the courage to repeat the feat this last summer, but I’m hoping to do it again next year. Maybe every other year would be good?
