Roasted Tomato Hummus #SundaySupper

I recently attended the PMA Fresh Summit in New Orleans and if you follow me on any of my social channels, you saw all the pictures of all the amazing produce.  There were so many beautiful fruits and vegetables and some varieties that I had never seen or tasted. But the one vegetable, or should I say fruit that blew me away was the tomato.  They had so many varieties with different colors that I had never tried.  I loved the cocoa tomatoes and their sweetness and all the cherry and grape tomatoes in a variety of colors. Basically, I came back a little obsessed with tomatoes.

I was especially excited this week when I was able to find the Gourmet Medley of  Cherry Tomatoes that I had fallen in love with at PMA Fresh Summit at my local grocer.  I have enjoyed the tomatoes straight up, with mozzarella cheese and have recently started roasting them.  Their sweetness coming through as they roast in olive oil and garlic.

Roasted Tomato Hummus #SundaySupper When Amanda from Maroc Mama suggested this week’s #SundaySupper event, I was thrilled that I could share this fabulous Roasted Tomato Hummus Recipe.  I am even more excited to share it with Alexandra when she comes home from college this month.  She is an avid hummus lover and I have a feeling this Roasted Tomato Hummus will become a favorite. Could it possibly beat out her recipe for Avocado Hummus?

Roasted Tomato Hummus #SundaySupper

Ingredients

  • 2 cans garbanzo beans
  • 1 cup Roasted Tomatoes or sun dried tomatoes
  • 2 cloves garlic
  • 2 tablespoons chopped onions
  • 2 tablespoons tahini
  • 4 tablespoons lemon juice
  • 4 tablespoons water
  • 1/2 teaspoon sea salt

Instructions

  1. Drain and wash Garbanzo beans.
  2. Combine all ingredients into a food processor.
  3. Blend until thoroughly mixed and smooth.
  4. Should be thick and creamy... If too thick add a little water or extra virgin olive oil
  5. Serve with fresh vegetables or chips

    I love hummus and the addition of roasted tomatoes sounds even better. It’s so fun to discover new kinds of produce–I only wish tomatoes were still in season here! 🙁

    Roasting tomatoes is probably my favorite way of eating them. And hummus is one of those perfect things to have in the fridge at all times. Put the two together, and this is so my type of food Isabel! Wonderful idea!

    If we could have fresh heirloom tomatoes all year I would be a happy camper. I’ll be trying this soon! The PMA shows are like a kid in a candy store for us, aren’t they 🙂

    I really need to start experimenting with more hummus flavors. I love the original so much it’s hard to branch out. Roasted tomato sounds great though!

    The Garbanzo beans I used had skin on them. This made the texture of the hummus really really horrible. How did you get around the skin? Individually peel each garbanzo bean? Your hummus texture looks great

      I have never had that issue. I do not peel my garbanzo beans but blend them enough in the food processor that they become smooth. Give it another shot and try blending them on high for a longer period of time. Good luck!
