Sunday Supper One Pot Pork and Chorizo #SundaySupper

Portuguese Pork and Chorizo I always say that the family table can be anywhere.  While I cherish all those moments around our kitchen table and those special occasions in our dining room, sometimes Sunday’s are made to be in the family room.  This is especially true in our home during Football Season.  When certain teams play, I have a hard time tearing Ron, the boys and their friends away from the family room.  Never mind trying to get them to clean up after dinner.  This is the time of year that “One Pot” recipes come into play and this One Pot Pork and Chorizo is a family favorite dish that is requested over and over.

Ingredients
  • 2 pounds pork cubes
  • 2 small chorizo or if you can get Portuguese chourico, even better
  • 1 tablespoon minced garlic
  • 4 tablespoons olive oil
  • 1 teaspoon paprika
  • 2 cups of arborio rice
  • ½ cup tomato sauce
  • 1 cup red wine or Portuguese Vinho Tino
  • 4 cups chicken stock
Instructions
  1. Line a large skillet with the olive oil
  2. Add the pork cubes and the garlic and saute on medium heat
  3. Slice the chorizo into thin slices
  4. Add the chorizo and saute until the pork is a medium brown
  5. Stir in the paprika and rice. Continue stirring until the rice is well coated
  6. Stir in the tomato sauce and the wine
  7. Add the chicken stock and bring to a boil
  8. As soon as the stock reaches boiling point, reduce heat to low and cover
  9. Cook on low heat for approximately 30 minutes or until the rice is soft and fluffy
  10. Stir the mixture and serve in the pot or on a large platter

Sunday Supper One Pot recipes are easy to cook and easy to clean up.  This leaves more time for watching football.  I also love that I can double this recipe when I have a house full of teenagers.

This recipe was inspired by Vo-Vo’s  original Portuguese Pork and Chorizo.  You can’t go wrong with either recipe.  They are both delish!

    We make exceptions for sitting at the dinner-table for some sporting events too. But, we are together enjoying one meal and there’s lots of laughter…would love to have this at our next gathering.

    This looks absolutely delicious! But then again… you said pork – and sausage. You can begin any sentence with those words and I’m already a fan :).

    You know.. especially for a sporting day, you can go the lessened clean up of the one pot one further by doling out a stack of flour tortillas and letting them just dig in and make tasty hand held porky wraps with it! Zero Clean up!

    Oh, this is TOTALLY my kind of meal…and I’d say, one meant to be eaten while watching football in front of the t.v. ;). One of these days, I will lay my hands on chourico, and make this (I’ve never been able to find it in my area…I may have to down and mail-order it)!

    This reminds me of a riff on Jambalaya, one of my favorite one-pot meals in the world. This looks just wonderful! And we’ll be in the family room later for an early supper while watching football too. Our grandsons now started playing this year (ages 7 and 9), and we’re so looking forward to watching them 🙂

    My eyes light up when I see rice in a skillet lined with olive oil! Plus any kind of spicy (vegetarian) sausage or real chorizo has got to make this meal a lip-smacking good one =)

    P.s. May I vicariously enjoy the wonderfulness of a big family crowding around a TV to watch football? My aunt (who has passed) was a big football fan and had similar family gatherings =)
