Easy Dinner Recipes #WeekdaySupper

Happy Monday! I’ve got a little extra pep in my step today.  We just returned from spending four days with old friends at Universal Studios Orlando.  I always say, old friends are like old shoes – they fit just right.  That is exactly how this weekend felt.  Comfortable, easy, full of laughs and lots of love.

We found ourselves enjoying so many moments Around the Family Table.  The family table was anywhere from our hotel room in the morning with homemade goodies, to a fun lunch at Margaritaville, to a fabulous dinner at Emeril’s Orlando.  The hotel was fantastic, the rides were amazing but what I really enjoyed most, was watching our children interact.  From the age of 6 to 20, there was a special friendship, love and admiration for one another. And that is what it’s all about… creating memories that will last a lifetime.  This was a trip that our children will be speaking of for years to come.

    I can’t wait for our family vacation! We’re meeting up with Bill’s brothers and their families…and I know we’ll have great times around the family table, too.

    It looked like you had a such a fantastic trip, Isabel! I was stalking you on Instagram and Facebook, wishing I could join in on all the fun and good food. I’m leaving for vacation this Friday and it can’t come fast enough!

    Looks like you were in the enchanted domain of Harry Potter and Emeril’s Orlando, Isabel. How fun! As you so succinctly stated the best part of a vacation is when everyone can comfortably relax and get along =)

    These are some really great easy recipes to follow during the week! Sometimes there is just no time to cook lavish meals during a week night.
