Do you remember how I told you that I just didn’t care for Tuna Salad? Well, I have a confession. Chicken salad is a whole other story. I love Chicken Salad and could probably eat it every day of the week. I love the kind that is made with grapes and almonds. The kind that is sweet and savory at the same time. Of course, I have realized that this kind of Chicken Salad, may not be so good to indulge every day of the week. So I have been experimenting with Greek Yogurt instead of Mayo. I am so excited that my experimenting has paid off. I have found a Greek Yogurt Chicken Salad that may taste as good, if not better than the original.
My Greek Yogurt Chicken Salad is made with some of my favorite things. Pear Greek Yogurt, sun-dried Tomatoes, Greek Onions, Sea Salt and oh my… Pine Nuts! It is out of this world. Sweet, Salty and Crunchy. And if this wasn’t enough, I nestled the Greek Yogurt Chicken Salad in the middle of toasty Greek Pita Bread. If you have never tried Greek Pita Bread, you must! It is nothing like the traditional Pita Bread. It is just the perfect match for the Greek Yogurt Chicken Salad.
Ingredients
- 2 cups cooked Chicken Breast, shredded
- 1 6 ounce Pear Greek Yogurt
- 2 tablespoons Sundried Tomato, finely diced
- 2 Green Onions, diced
- 2 tablespoons Pine Nuts
- Sea Salt to taste
Instructions
- Mix the Chicken Breast and Greek Yogurt in bowl
- Add the Sundried Tomatoes and Green Onions
- Sprinkle with Pine Nuts and Sea Salt
- Serve with Greek Pita Bread, Whole Wheat Bread, Crackers, Veggie Sticks or on top of a garden salad
