My Dad is a total sweet tooth. I could go on and on about all his favorite Portuguese desserts. Seriously, it is not a meal for him if it doesn’t end with a sweet. Pudim Molotoff, Portuguese Mering Pudding is one of his very favorite portuguese desserts. There are times that I have wondered what he enjoys more, the dessert itself, or the fact that it prolongs the time that he can spend Around the Family Table. And of course, you can’t have Portuguese desserts without a glass of Port Wine. Then we can’t forget the coffee. Enjoying a meal with my Dad is truly an Art and this Pudim Molotoff, Portuguese Meringue Pudding is the icing on the cake.
Nothing is more important to my Dad than his family. He is the epitome of unconditional love and truly understands the value of spending time sitting and conversing through long meals. Sometimes we joke that he just wants course after course so that he can sit at the head of the table and hold court.
My Dad has shaped my life in so many ways… and at the core of my mission to Bring Back Sunday Supper Around the Family Table in every home is Pai Eco. This picture of Pai Eco and I was taken right before he left Portugal to pursue his dream of coming to the United States of America. Leaving his family behind but knowing that he was going to provide a better future for them.

Pudim Molotoff, Portuguese Meringue Pudding #SundaySupper

- 8 Eggs, yolk and whites seperated
- 8 Tbs Sugar
- 8 Tbs water
- 2 Tbs Butter
- Juice from ½ Lemon
- 4 tbs Cornstarch
- Pre-heat oven to 325 degrees
- In a metal bowl whip the egg whites on high until this are stiff and form peaks
- Add the cornstarch, one tablespoon at a time
- Slowly add the 2 tbs of sugar and continue to whip
- Place the peaks in a greased bundt pan and bake for approximately 25 minutes or until the peaks are lightly brown
- Meanwhile, prepare the topping by boiling the water, 6 tsps sugar and butter until the thick and gooey
- Remove from the heat and add the egg yolks
- Add the Lemon juice at the end and mix until smooth
- Bring to a boil. Add a little water if mixture becomes too thick
- Remove the Meringue from the oven, let cool and invert onto a large round plate, with sides
- Top with the sweet caramel mixture and serve immediately
