Prosciutto Encrusted Pork Loin and Parenting Dilemma’s for #SundaySupper

Have you ever questioned yourself as a parent?

You can only imagine with four children how many times I have!

Our latest challenge had to do with following through with our commitment.  We try to teach our children that once you sign for something, you follow through with your commitment.  Not every season will be a perfect one but quitting is pretty much unacceptable in our house.

Our two youngest are involved with a great program at school call Odyssey of the Mind.  This would be Reis’s fourth year participating.  He is my creative and artistic one.  When I tell you this is his thing, I am not kidding.  He looks forward to Odyssey every year!

Well for whatever reason, two of the boys dropped out at the last minute.  The night before the competition I received a phone call from Reis to come and pick him up  3 hours before practice should have been over.  He was devastated, he was discouraged, he was sad and let down.

Being the Football family that we are, our boys  signed up for Spring Football. Spring Football to us is a more laid back and fun way for the boys to stay active and in shape.  Reis was missing two football games that day to make Odyssey.  We were fine with it because Odyssey was our first commitment. When we realized that Reis’s Odyssey team would most likely not participate… we broke the rules and made the decision for our child, he should go to his two football games.

In our hearts, Ron and I felt that we made the right choice for our child and the situation at hand. It was not the popular choice with his teacher and coach.  It was not the easy choice but it was the choice we felt was best for him.

Sometimes we wish parenting was black and white.  More often than not, it is not.  All we can do is hope that we are doing what is best for our children.

PROSCIUTTO ENCRUSTED PORK LOIN

  • 1/2 Pound Prosciutto sliced extra thin
  • 3 Pound Pork Loin
  • 1 Garlic Clove sliced thin
  • 2 green onions sliced thin
  • Olive Oil
1. Brush the Pork Loin with Olive Oil
2. Layer sprinkle with green onions
3. Layer Garlic Clove
4. Layer the thin slices on the Prosciutto over the Pork Loin
5. Brush the Prosciutto with Olive Oil
6. Place in preheated 375 degree oven for approximately 1 hour.  Use Meat thermometer to check when done.
The top of the Prosciutto will be crispy.
*Notice, I did not add salt to this dish.  The flavor and salt from the Prosciutto will seep into the Pork for an amazing flavor.

This Pork Loin is perfect for Sunday Supper or any special event Around the Family Table.  It is one of our favorite meals to serve when entertaining.  It goes perfect with Smashed Potatoes and Port Wine Gravy.

    Isabel, this looks absolutely delicious!! I am so in love with prosciutto and the flavors it infuses into meat, oh yes please! Great recipe and post!
