What makes a perfect Sunday Supper? While I don’t have the perfect answer, I do know that in our home, the perfect Sunday Supper is about so much more than the food. It is about the feeling, the emotions, the sense of family and the memories that are made around the family table. Pork Piccata with lemon and capers is one of our favorite Sunday Supper meals. My kids will tell you that the smell of it simmering is pure torture.

- 8 thin boneless pork cutlets, approximately 2 pounds
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup flour
- ¼ cup olive oil
- 1 cup of white wine
- 3 tablespoons capers
- ½ lemon sliced
- juice from ½ lemon
- 1tablespoon butter
- Combine flour, salt and pepper,
- Dredge both sides of the Pork in flour mixture and shake off excess. Discard remaining flour
- Heat oil in a large skillet over med-high heat.
- Add pork and saute for 2 minutes per side.
- Remove pork to a plate and keep warm.
- Add wine to skillet and simmer 2 minutes,scraping up any browned bits Stir in the capers and lemon juice.
- Return the pork to the skillet and simmer gently for about 5 minutes Whisk in the butter.
- Server over Rice or Pasta
- Top with slices of lemon
