Root Vegetable and Beef Flatbread #SundaySupper

This recipe came about after a very busy week at work. I have been traveling quite a bit and since my boys adore beef, I often leave a heaping crock of asian beef in the slow cooker for them. It is a family favorite and perfect to enjoy as a sandwich, with potatoes or over pasta. It makes me feel better to know they are well fed while I am away.

My boys enjoyed the Slow Cooker Asian Beef, the first night and called to tell me how delicious it was. But they decided to “go to one of those wing places that mom would never enjoy if she was around.” Seriously, how rude! Needless to say, I got home to half a slow cooker full of beef.  After a delayed flight in Atlanta, trust me, this was a scene that was very comforting. I’ll admit, the last thing I felt like doing was cooking.

And like most nights at our house when we don’t know what to make, we turn to our old reliable friend the flatbread. You have to admit, flatbreads are so much fun and everyone can add toppings they love. On this particular evening, we had tri color carrots and radishes in the fridge. And while initially, I thought to slice them and roast them in a bit of teriyaki, I decided to try something new.

Using a vegetable peeler, I shaved the gorgeous carrots. They have just enough crunch, just enough bite and just enough flavor to complement the asian beef. I also shaved some radishes because I love their texture and flavor. Everyone added the cheese and beef to the naan bread and then added the toppings of their choice. Cheesy Beef Flatbread met carrot salad and it was a marriage made in heaven. A drizzle of olive oil and a tad of balsamic vinegar and this was a flatbread that we will be enjoying time and time again.

I forgive my boys for going to that wing place that “mom won’t step foot in” while I was out-of-town. If it wasn’t for all the leftovers, we may never have discovered this fun non-traditional recipe that we will enjoy time and time again.

Ingredients
  • 2 Naan flatbreads
  • 1 cup of shredded cheddar cheese
  • 1 cup of leftover shredded beef, I love to use my Slow Cooker Asian Beef
  • 6 small carrots, I love to use multicolored carrots but any carrots will be delicious
  • 4 radishes
  • extra virgin olive oil
  • balsamic vinegar
  • sea salt and fresh ground pepper to taste
Instructions
  1. Preheat oven to 350º
  2. Sprinkle cheese over the naan flatbread
  3. Shred the beef evenly over the flatbread
  4. Bake for approximately 15 minutes or until the cheese is bubbly
  5. While the flatbread is baking, shave the carrots and radishes using a vegetable peeler
  6. Remove the from oven and top flatbread with carrots and radishes as desired
  7. Sprinkle with extra virgin olive oil and balsamic vinegar
  8. season with sea salt and fresh ground pepper to taste
  9. Slice each flatbread in 4 and serve immediately

    Funny we had similar ideas but turned out very differently! A great way to use leftover beef, the veg on top is really colorful.
