Easy stove top Marsala Roast Beef will have your house smelling so good. The delicious flavors of beef combined with a light marsala sauce is a beautiful thing.
It’s official, fall is in the air. The cooler temperatures, the golden leaves and sweaters keeping us warm, all indicate a change in temperature. Or so I would like to think. We live in Florida and can only imagine what fall must be like in the rest of the country. Our temps are hovering around 70, our palm trees are still green and flip-flops are everywhere, but to us this is fall. We are ready to roast low and slow and join the rest of the country in celebrating the season.
If I am to be completely honest, my boys would enjoy a delicious roast beef for Sunday Supper every week. It is truly a family favorite. When that roast beef is combined with mushrooms and a marsala sauce, they go crazy. It’s true, at our house this delicious easy stove top Marsala Roast Beef is a recipe that is requested over and over.
I love this Sunday Supper dish because it is one of those recipes the entire family is so excited about from the minute we purchase the bottom round beef roast. I love to add the rub the night before and let it sit overnight in the refrigerator. It creates the tastiest beef. The next morning, I add all the veggies and let it roast on the stove top low and slow. Not only does our house smell amazing, the entire street can smell this delicious Marsala Roast Beef. There is something about anticipating a meal when the delicious smell lingers throughout the house all day long.
Many times, we serve this dish right out of the dutch oven with the light marsala sauce cradling the potatoes, mushrooms, radish and carrots. Other times, we like to add some pasta such as pappardelle to it. After all, it is an Italian dish and my boys love the addition of pasta. It makes for an amazing presentation that looks like you fussed in the kitchen for hours when you invite friends over. Let everyone dig into this delicious dish.

When it comes to choosing healthy proteins, lean beef is a delicious and healthy choice. It’s also a perfect partner for fruits, vegetables and whole grains, making it even easier to enjoy a balanced diet. I promise you will not miss the heavy gravy of marsala in this dish. This light marsala sauce paired with the roasted veggies will be a showstopper, especially when poured over the tender roast beef and veggies.
This is truly the dish that keeps on giving. I love to prepare this recipe on Sunday and use the leftovers for easy Weekday Supper recipes. Marsala Roast Beef bowls are perfect for our busy football schedule and a nutritious meal.

- 3 pound bottom round beef roast
- For the rub: (optional)
- 4 tablespoons spanish paprika (do not use smoked paprika)
- 1 teaspoon coarsely ground black pepper
- 2 tablespoons garlic powder
- 1 tablespoon coarse sea salt
- For the Roast and Vegetables:
- 1 large onion, sliced
- 2 tablespoons canola oil
- 3 cups of carrots, sliced thick or cut into sticks
- 1 pound small mixed medley fingerling potatoes or potatoes of your choice
- 6-8 radishes (optional) I really enjoy them roasted
- 3 cups baby bella mushrooms
- 1 leek sliced thin
- 1 cup beef broth
- 1 cup marsala wine
- Combine the spanish paprika, black pepper, garlic powder, sea salt in a small bowl.
- Rub the beef tenderloin with the spice mixture. Give it a nice even coating and let it sit in the refrigerator overnight. While this step can be eliminated, I highly recommend it. It adds an amazing flavor to the delicious beef.
- Cover with plastic wrap and refrigerate overnight.
- Heat oil in a dutch oven or large stockpot.
- Sear roast for a couple minutes on each side over medium-high heat. The roast should be nicely browned on all sides.
- Add onion, carrots, potatoes, radishes (optional) to the bottom of the dutch oven.
- Top with mushrooms, leek and beef broth.
- Adjust temperature of low, cover dutch oven and cook for approximately 1.5 hours.
- Add marsala wine and simmer for an additional ½ hour.
- Slice roast against the grain or pull in bite-size pieces. Serve with reduced sauce.
- I love to add some pappardelle pasta to this and serve on a large platter along with the potatoes.
- Serve additional sauce in a gravy boat. This is a very light marsala sauce.
- It is an amazing combination of flavors.
- Garnish with parsley and parmesan cheese if desired.
