- 3 pound bottom round beef roast
- For the rub: (optional)
- 4 tablespoons spanish paprika (do not use smoked paprika)
- 1 teaspoon coarsely ground black pepper
- 2 tablespoons garlic powder
- 1 tablespoon coarse sea salt
- For the Roast and Vegetables:
- 1 large onion, sliced
- 2 tablespoons canola oil
- 3 cups of carrots, sliced thick or cut into sticks
- 1 pound small mixed medley fingerling potatoes or potatoes of your choice
- 6-8 radishes (optional) I really enjoy them roasted
- 3 cups baby bella mushrooms
- 1 leek sliced thin
- 1 cup beef broth
- 1 cup marsala wine
- Combine the spanish paprika, black pepper, garlic powder, sea salt in a small bowl.
- Rub the beef tenderloin with the spice mixture. Give it a nice even coating and let it sit in the refrigerator overnight. While this step can be eliminated, I highly recommend it. It adds an amazing flavor to the delicious beef.
- Cover with plastic wrap and refrigerate overnight.
- Heat oil in a dutch oven or large stockpot.
- Sear roast for a couple minutes on each side over medium-high heat. The roast should be nicely browned on all sides.
- Add onion, carrots, potatoes, radishes (optional) to the bottom of the dutch oven.
- Top with mushrooms, leek and beef broth.
- Adjust temperature of low, cover dutch oven and cook for approximately 1.5 hours.
- Add marsala wine and simmer for an additional ½ hour.
- Slice roast against the grain or pull in bite-size pieces. Serve with reduced sauce.
- I love to add some pappardelle pasta to this and serve on a large platter along with the potatoes.
- Serve additional sauce in a gravy boat. This is a very light marsala sauce.
- It is an amazing combination of flavors.
- Garnish with parsley and parmesan cheese if desired.
