After a busy week, sometimes it is those dishes that are so simple that are the most rewarding. This dish is one of them. I made this for Sunday Supper but honestly this Tilapia with caramelized onions, tomatoes, and goat cheese is perfect for a weeknight meal. It cooks very quickly and is absolutely delicious![print_this]
Tilapia Caramelized Onions, Tomatoes and Goat Cheese
- 4 Tilapia Fillets
- 1 large Red Onion Sliced thin
- 1 large Tomato cubed
- 4 ounces of Goat Cheese crumbled
- 2 tablespoons of Worcestershire
- 4 tablespoons of Butter
- Salt and Pepper to taste
- Melt Butter in large frying pan
- Add onion and brown
- Add the tilapia
- Sprinkle the Tilapia with the Worcestershire and salt and pepper
- Cover and simmer on low for 5 minutes
- Top the Tilapia with tomatoes and simmer for another 5 minutes or until the fish is no longer translucent (depending on the thickness of the fish)
- Remove from pan and plate with caramelized onions, tilapia, tomatoes and top with goat cheese[/print_this]
I like to serve with sliced baked potato sprinkled with olive oil and sea salt and a garden salad.

July 18, 2012 at 10:43 amHere you go again making me hungry again LOL. This sounds great and might leave the tomatoes raw and add juice from a lemon on fish and then add everything else? But I love fish, thank you for the recipe!

June 29, 2014 at 10:35 pmI tried this but tweaked it a little bit. I used blue marlin instead of tilapia and used sun dried tomatoes instead of the fresh ones. My oh my, it was phenomenal and super yum! Thanks for posting this!
