Happy Monday Friends!
I am still stuffed this morning after our Easter Feast yesterday! This week is Spring Break for my boys. Typically, Spring Break is a time when I try to juggle work and spending time with the boys. Always a challenge for every working mom. This year, my parents made it easy on me by taking the boys on a cruise. Although I miss them, I know that they are creating memories that will last a lifetime with their grandparents. I can’t wait for them to get home and hear all about their trip.
Our menu this week will be super easy. Only one child in the house, who will most likely be spending his days at the beach with friends. We have been joking with Ronnie that this is what it would be like to be an only. When you are one of four, it is quite a treat!
